Currently it looks pretty good and not too cluttered with stuff on the screen.
Can it stay that way in the actual game, or will it end up with a load of widgets all over the place? Could it be customizable?

HUD can for sure change over the next year and a half, plus that demo could've easily just been hiding stuff to let the viewers see more if the environments. The Hud is essentially still a question mark at this point.
I also think you're confusing HUD and UI. UI tends to be inventory menus and such HUD is what you visually see out of menu.

Just nitpicking here. UI = User Interface. User Interface takes into account essentially all of the menus, inventory management and heads up display etc. All of the stuff that holds buttons or information. It's the management of it. UX = User Experience. User Experience is the way things look. Where things are on a display. Can the menus, heads up display etc. be easily accessible, easy to use and easy to understand. So the HUD is technically UI, but relies heavily on good UX.
