I saved the bookmarks of some Last Court info posts from Ye Olde BSN. They're available on the Internet Archive, but I thought I might as well post them here.
To be clear: I did not write these guides. I am sharing these here for the convenience of the new BSN.

So, I have been looking for a definitive guide on how to get the best outcome in "The last Court" because I'm insane and just HAVE to have all the Skyhold customization options. Though there is a problem: I have found NO definitive "do this and you win" walkthroughs. For someone like me who doesn't like text-based adventures, but DOES need to collect EVERYTHING in Inquisition, that was very frustrating.
Fortunately, I've stumbled across something. A way to earn all the trophies, secrets, and viands you want without moving past the second market day (if you have enough time on your hands during the first day that is). This way, you can get the best ending without having to stress out on everything else in the game.
So, here's my guide to getting as many trophies, secrets, and viands as you want, enjoy!
First, choose to be the huntress. This will make hunting, which you will be doing a lot of in order to acquire trophies and viands, easier.
Next, on your first market day, look for the card entitled "Good Neighbors". Choosing this market day card adds "The Dowager's Decline, The Dashing Outlaw Strikes Again, The Uprising, and His Dour Lordship" cards to the Happenstance deck. The first three you'll need to be on the lookout for, as they are the key to this strategy. If you don't get the "Good Neighbors" card on your first market day, you can either restart the game until you draw it, or try to get it on one of the other market days.
Keep drawing from the happenstance deck until you get one of the three cards. You can do them in any order.
For "The Dowager's Decline": Simply progress through the case to get +1 Tangled Web.
For "The Dashing Outlaw Strikes Again": Choose the option to "Send them away empty handed (but promise to investigate). This will unlock "Case: The Dashing Outlaw Strikes Again" (I am unsure if the other option for the card unlocks the case as well). Progress through the case until you get "The Cave". Choose either option here as you get +1 Tangled Web from both of them, however, returning the goods to the merchants seems to have better additional rewards.
(Completing both cases should unlock "A Tangled Web".)
For "The Uprising" Simply Progress enough to unlock "Case: The Uprising", but DO NOT COMPLETE IT!
Now, use authority to summon the Wayward Bard and spend 5 bags of royals to gain a favor from him. If you need authority or bags of royals, you can get them from the "Gather Resources" pinned card.
Now that you have a favor from the bard, go to "Case: a Tangled Web" and select "Ask the wayward bard for his professional opinion" This will gain you 5 clues without costing you the favor, but will cost 1 action point. This way, you can keep accumulating as many clues as you want.
Spend 30 clues in "Case: The Uprising" on either the "Investigate in more depth" option or the "Investigate the merchant of soda ash" option. Both cost 30 clues and yield +1 Secret without ending the case. This way, you can gather as many secrets as you want.
Trophies and viands, as I said before, you will acquire through hunting. The Hind will grant +1 Viands, and the Boar will grant +1 Trophy. I find it is usually better to bring the dogs with than anything else, unless you're low on health, then bring provisions.
So there you have it, keep gathering trophies and viands from hunting, and secrets from the uprising case. Gather clues from the tangled web when you run low, and when you're ready, advance through the market days to the end of the game.
I haven't beaten the game yet myself, but I stumbled upon this helpful loop and felt I should share it. Hope it helps all you out there who, like me, just want new windows for Skyhold.
**UPDATE** I found out something else. When you progress enough through "The Sealed Chantry" to the point where you get the option to "Talk to the Anchoress", you can keep asking her the same questions over and over again to increase your Scholarship, Cunning, And Rulership qualities. Each question requires 10 clues, which are easy enough to get from the tangled web, and give xp toward another point in one of the three areas. I think you get a point every 2-3 questions, but it uses 3 actions each time you return to the Anchoress.

So I just finished the game. I found that if you have 9 each of secrets, trophies, and viands, it's overkill. Friendly tips: don't invite the horned knight to present a gift to the divine, don't unseal the chantry, and get your rulership as high as you can. Do (or in the case of the first two, don't do) all that, and you're practically guaranteed to win.
