Why do people believe the Earth was created in 7 literal days 6,000-10,000 years ago? The problem with trying to be sensible and rational with these sorts of people is that they're neither sensible nor rational.

I mean... you can actually see the earth is curved by just looking at the sky... or going on a plane. I dont get it either... They actually have elaborate theories to explain all that. I once started reading a 10-page or something paper explaining the optical illusion that makes ships seem to disappear below the water surface in the distance. It didn't seem to make a ton of sense, but certainly a lot of thought went into it. After some time of trying to understand the argument and find the flaws, I thought why the fuck am I wasting my time on this crap and threw it in the desktop recycle bin.

You certainly have to give some of the theories credit, though. Some people put an astounding amount of thought and effort into trying to explain these 'conspiracies'. It almost makes you wonder what would happen if these people put such passion and thought into actual scientific research.

I don't think they would do much good in scientific research. As far as I could tell, it's a mess of false premises, twisted logic, obscure deduction etc. All that confusing reasoning is used (and necessary) not to find truth, but to prove the assumption no matter what.
The books I've read on quantum mechanics and string theory were 10 times easier to understand.

The Bible does not state Earth as being flat. Isaiah 40:22 mentions Earth as being a circle; however, a circle does not mean flat. In fact, a sphere is round like a circle. And when viewed from Earths' moon, one can see that Earth is a sphere that spins.

To be fair, Ptolemy did develop a very detailed solar system with the Earth in the center that worked for nearly 1500 years until the science and technology to disprove it came along through people like Galileo. Even Newton's work didn't last a fraction as long until holes were seen in it, though again to be fair Newton acknowledged those holes, seeing his work as "too sloppy" but he didn't have the technology to further refine it thus could only predict what Einstein later proved.

The Catholic Church has come around to accept global warming, evolution etc. That doesn't mean all Christian groups have done the same. The Catholic Church isn't the most backwards church by a mile.
