I just sliced the tomato into slices and laid them flat with butter in pan, cooked a bit, flipped them, added spice and let them get just a bit charred, then added eggs. then flipped those once. Tomatoes and eggs are such a nice combo. Even better with Bacon but isn't anything? GhostofFuckIt Omelettes are one of my favourite things, Bacon, Tomato and Cheese with variations like Green Bell Pepper, Avocado, Green Onions etc.

What do you all call this? Is that not called a toad in the hole? I've heard quite a few names for it now. I used to call them "Pop-eyes". Nothing to do with the cartoon character, rather you're popping out the "eye".
Also heard it called...
Egg in a hole Egg-in-toast (Pronounced like egg'n'toast) Moon over Maimi Eggs and a few others I can't recall off the top of my head.

GhostofFuckIt Omelettes are one of my favourite things, Bacon, Tomato and Cheese with variations like Green Bell Pepper, Avocado, Green Onions etc. I love all those things in em but my favourite is still a simple ham and cheese. Ham has to be extremely finely diced though, all about texture. Then sprinkle in some green onion and enough black pepper to spark a war-crimes tribunal. The green onion I had today with my breakfast was thicker than my thumb at its base, and so strong it started to make me tear. It was amazing with the fried potatoes, whole mushrooms, and sunnyside up crispy bottomed eggs I had.

Edit: Oh, but the best breakfast ever is eggs benedict made by someone other than yourself. (Hollandaise sauce? Ain't nobody got time fo' that.)

Yeah I don't mind ham in them as well and Pepper I put in just about anything, white pepper in Scrambled eggs though for some reason??? Oh Eggs Benedict is my go to when out for breakfast, I love Poached Eggs (even they can be a pain so another "treat" when out) and as you said a good home made/Restaurant made Hollandaise Sauce is awesome. Damn Cafe's here lately have been using Store Bought Hollandaise I have to ask now, cause some of it is just downright terrible.

My dad uses to make 'poached, egg on milk on toast' At least that is what he called it. He would heat milk, add a couple of eggs and cook the eggs in the milk and put it over toast with a bit of salt and pepper. It was really good.

I tried making shirred eggs a few times many years ago. If you're unfamiliar it's basically baked eggs with cream, but not necessarily mixed together, and toppings like grated cheese or green onion. Generally baked in ramekins. The eggs do weird things with the cream when they bake even though its not mixed, so it was a bit interesting, worth trying. But one of those recipes that's more pain in the ass to make than it's entirely worth. Particularly when eggs can be so many delicious things so quickly another way.

Slow cooked two giant farm raised chicken breasts in my slow cooker. Now they are in the hot air oven with a new glaze i invented. Garden potatoes have been put in the slow cooker where the chicken came from. I do not drink much anymore but am having a few glasses of home made pear raspberry wine.

Today is lazy cooking day for me as I always cook. I will BBQ for lunch Chicken Chermoula Skewers and Wagyu Beef Skewers from one of our local Butchers that sell absolutely great meat, but it is a bit expensive. The family Will make a Baby Spinach, Sun-Dried Tomato and Roast Pumkin Salad with Pine Nuts and Fetta. A traditional Greek Salad and also cook some rice, might jazz the rice up a bit not sure how yet. Then we will graze on Charcutier Board of various cheeses and Salami, Ham, Mortadella, pistachios, stuffed mini-peppers and other stuff I have forgotten and probably watch a movie. Last year it was Dune. Then in the early night we will have Pudding and Brandy Custard Sauce that my daughter made this morning and then we will roll to bed. Merry Christmas all.

I do not drink much anymore but am having a few glasses of home made pear raspberry wine. That sounds good. Made some Caesars last night for the building manager. Tried a slightly more expensive brand than the usual Mott's. Honestly didn't do much for me. Still have a bottle of Mott's so a day or two from now me and the building manager will contrast em. Garnished with these spicy pickled asparagus spears that are heaven-on-earth, particularly after they've marinated in a Caesar for a while. Tomorrow I have a bottle of metheglin I may or may not share with the class.

and then we will roll to bed. No kidding, sounds amazing. Expensive little things, I briefly worked in an Italian deli here and people would come specifically for the pine nuts. Never knew they were a thing before that. Weirdly frequently asked question. *** Today I made myself a great breakfast. Rashers of low sodium bacon which I prefer the taste, and an egg/mushroom/green-pearl onion skillet liberally topped with salsa. Been happily picking at things since then. Dried leathery mango strips that pair well with the creamy-orange witbier. Black berries 'cause I forgot to get gooseberries, gouda, and I'll probably have to replace the jar of spicy pickled asparagus if I want to do those Caesar's again. Should come with an addiction warning label like cigarettes. Somehow despite quite enjoying spending the holidays alone, I find myself half-helping one turkey dinner tomorrow, and then a few hours ago found out there'll be another one I have no hand in the following day. Neither are the type I can say "no" to gracefully either.

Had a nice thick chicken breast which I thinned up by cutting it in half.
I had about a 1/2 dozen oranges which were starting to go bad, not bad yet but the oranges were getting hard.
So I cut them all in half and squeezed he juice into a fry pan.
I then added some red pepper and garlic spices into the juice.
I then added a bit of maple syrup to the pan and heated it up.
Placed the chicken into the pan and cooked it slowly to reduce the liquid into a thicker syrup.
Placed the chicken on a plate and put the cooked syrup on top.
Turned out very good indeed!
