I've played through Inquisition a couple times, but I've never really been clear - is the approval system here more like DA:O's, or DA2's? Namely - if a party member *dislikes* me enough in Inquisition, will I get access to their personal quests and such, or do I have to have high approval with them?

More like DAO. If you don't have high enough approval, you won't get their quests.

Darn. I'd had hopes, considering I'd heard there is *some* counterpoint content (like being able to punch Solas in Trespasser if your relationship with him is bad enough). So I guess I do have to be best buds with everyone?

So I guess I do have to be best buds with everyone? Not really. More like avoid doing things to piss them off too much.
Some quests are available right away by talking to them, like Blackwall's Warden artifacts. Dorian's quest to kill Venatori is available, I believe, as soon as you arrive at Skyhold (it's on the War Table). In contrast, some personal quests are locked behind main quests or other actions. You won't get Cole's quest until after Adamant, and you won't get Blackwall's until after both Adamant and the ball. You won't get Iron Bull's unless you specifically talk to him about the Ben'Hassrath and do the meet/greet with the Chargers. It also helps to take him dragon hunting.

I remember Cassandra hated my Inquisitor enough to get drunk scene, but I still had her Seekers quest.

But not Varric's book quest. The Seeker quest is very plot relevant. I don't remember whether I had a book quest or not. However, it is possible that you may get serious plot related quests regardless of approval, but some minor scenes only if your character is liked. I know for sure if Varric doesn't like you, you will not get the Wicked Grace scene, which is a favourite for so many people, but this scene is not plot relevant.
I guess if you hate the Inquisitor you can always send them to fight Venatori. If Inky wins, it's good, if Venatori win no big loss there anyway.

I haven't managed to trigger Solas's quest in the game where I allied the Templars, recruited the Grey Wardens, and followed up that second one by resolving three judgments in a row in ways he disapproved of. I think companion quests must require the companion not to hate you, at least.
