Are they magically modified, born that way or just a way of showing who the boss character is?

I've yet to play Trespasser, but I'm assuming you mean Saarath?
I think some of them might be magically modified, just like in lore the Qunari themselves were (supposedly) magically modified from the Kossith race
however I also think it might be to show who the boss character is, several boss characters (like for example the leader of the Blades of Hesserian) are larger then normal to show they're stronger

The larger size could also be an effect of lyrium. Samson grows larger when he juices, and if you hit him with Dispel, he shrinks back to normal. Saarath is basically on superpower levels of lyrium thanks to Viddasala, so being larger than normal seems about right.

Yeah that and I think magic in Qunari is more potent too as I have noted in both DA2 when you have your big fight with the Qunariin Act 2 and again in Trespasser Sarebass power does seem to have more potency to it. By that I mean they can and do do a lot of damage to you if you don't pay any attention to them and neutralise them quickly. I've died quite a few times engaging them

Sarebass power does seem to have more potency to it. Plus the fact that in Trespasser the saarebas are unleashed so there is no one limiting their power which is then hyped up with lyrium. It was probably a good job Solas turned all the surviving members of Viddasala's party to stone so word didn't get back to HQ of just how unstoppable saarebas can be when on lyrium.

i think it's not a lore thing and rather an artistic choice. they have the tendency of making some boss characters bigger. like when they make some mercenary character bigger than your qunari.
