Greetings.
Between the 3 classes we have in game, I would say that Rogues have the highest gameplay lore segregation.Examples include unlimited mines or traps, steathing in broad daylight where there are no shadows, etc.
So my question is how do Rogues fight for real in Thedas ? What do they actually do when they fight ?

I suspect that rogue abilities, when viewed through an in-world perspective, are like a Shinobi's (hope I got the word right). Like, one moment you don't know where they are, then all of a sudden, you're seeing an enemy drop. They're likely the parkour specialists, the snipers, the combat engineers. The combat mechanics seem to be a bit exaggerated for effect since it's hard to express stealth as simply being hard to notice by enemies (because how would you know if it's working?) Stuff like thousand cuts or hidden blades, I'm not sure is as it literally looks, but it probably would be impressive to see from an outside point of view. Damn, I want my mage to be as agile as that! I wish for cross class specialization!

Leliana's last stand cutscene in In Hushed Whispers is probably a good example of a high level rogue fighting. At least for the overt stuff.

I know this is probably not actually how it will work, especially in real life, but I always imagined that the rogues abilities especially the stealth is one of two things. Either one the powder, whatever it is, temporarily disorients the person looking at the rogue effectively making them invisible. Or that it also has the slight ability to temporarily cling to the rogue allowing them to effectively blend into their surroundings as active camoflague. Sure its far fetched but again look at the other abilities in the world.
