MEC Troopers become exceptional in the mod, but yes - I would do the same in vanilla EW. I'm actually one of those who... consider giving one's limbs one of the highest sacrifices. I always carefully considered who would become a MEC, and even then - never the troops I cared about. All my MECs were fresh-faced Specialists when they were augmented. It was not that a MEC was a punishment in my games - I simply chose people I did not care about yet, and began to care after their augmentations. When I started to put my XCOM:LW troops in XCOM2, well... I have screenshots of all of the ones I really cared about, and there are a few MECs... who will eventually see tribute in the form of SPARK units named after them. For now, however, only my regular troops are transferred.

If you look at the female mech troopers, it looks like they gave up the ability to reproduce too (the mech limb attach points cover on their genitals). So I almost always only choose to create mech troopers from my male soldiers. Typically I only had 2 troopers too, take one with me on a mission, and alternate them as needed. Xcom 2 is actually very interesting. I'm just not sure how to...crap, this contains spoilers: I'm not sure how to get that atlas timer to reduce. Killing a Codex and an Avatar the first time is a significant blow. Destroying any facilities will also delay the progress significantly.
In the end, however, you can't do this indefinitely. They will eventually succeed, no matter how much you fuck their shit up. You can only delay the inevitable, and eventually do the final mission - but you're under time pressure.

For new people worried about Avatar counter: ignore it and do your thing. Just make sure Blacksite mission can be accessed when needed. When doomclock starts countdown, ignore it and do your thing. When doomclock is at ~3 days, do Blacksite mission. That resets doomclock and sets Avatar counter back, giving you at least month of additional time to do your thing. Every blacksite (and several story missions) can be used like this, there's no need to rush. Just make sure that at any given time at least one of those are accessible. Also, in case you play Ironman, MANUALLY BACKUP YOUR SAVE!! It's quite possible to run into some gamebreaking glitch. People reported completely corrupted save files, or you can just run into something that'll wipe your squad and in critical mission that translates to GAME OVER. Example I run into: Last soldier, moving to firing position to kill last remaining enemy. Icon clearly indicates that he'll have LoS. After moving, nope, I'm screwed. In Ironman, this means in best case wounded soldier, but wiped squad and mission failure is more likely. And if it's critical mission, it's GAME OVER. Getting your ass kicked because you suck is okay, losing because of glitches (or missclicks, don't forget those suckers) isn't.

Looking forward to bringing over my old squad from the first game (plus some newbies) to take it the aliens!!! Well so long as they don't keep missing those 95% hit chances!!! Then let me disappoint you, according to modders, it's possible to miss even 100% shot; displayed chance to hit is rounded up, so if your CTH is 99.4% you'll see 100%, but 99.4% can miss.

I can remember once scoring a proper fucking score on an Andromedon with a Psi/Specialist with Combat build.
First I Dominated the sucker (meaning I took control over the suit operator, resulting in me having a perfectly good Andromedon) and when the Ayyy's got their fit of blue-on-lol-not-so-blue-anymore, I hacked the suit, meaning I had control over the sucker before AND after operator death...

I love XCOM2 but I'm not entirely convinced by the Alien Hunters DLC - even less so that even if you start a game without selecting it you get the big-ass super aliens pop-up randomly anyway (until you kill them off). You need a decent squad and upgraded gear really so they start appearing just a little too early to deal with without suffering badly... especially since they're bullet sponges as well and getting rid of them can make the time limits really, really tight.
I hated Sectopods in the previous game, it was like they decided to put everything into that one unit and make it super-super tough - the alien bosses are worse.
Sectopods aren't quite the super-unit in XCOM2 - they're vulnerable to armour shredding, tech units and heavy weapons; bring your standard XCOM late-game gear to bear and they'll fall before they can really have a massive effect (you do need to prioritise them though, they can screw you over horribly). However, you've now got Gatekeepers to contend with; they are like psionic Sectopods in how they play - they've got AoE attacks and all kinds of nasty. Best bet - train a psi-operative yourself and mind-control the buggers!
I've played the XCOM games all the way back to the original - I loved Terror from the Deep. XCOM2 is just as good... except for the slightly iffy Alien Hunters DLC; but then the base attack missions in Terror from the Deep got seriously repetitive after a while so it's not like that game was without flaws.

And now consider that my shock trooper MECs were equipped with a flamethrower AND a Kinetic Strike Module.
And if I wished to sacrifice armor plating, I could get an even more mobile suit and a third upgrade - Proximity Mine launcher would be my first choice, but on an Archer MEC, I'd allow either a third Proxy Mine ammunition store, or add some support module to it's existing capabilities.
All in all, my favorite MEC classes are Valkyrie (augmented Infantry) and Archer (augmented Rocketeers).
