I'd love to try it, might be a while before I can make it. I have family coming over in a couple of nights and am making this chicken recipe: tatyanaseverydayfood.com/creamy-chicken-stew/Yeah people always underestimate the prep time, the above recipe I have planned 30 to 45 minutes cutting and getting stuff ready and my chopping skills aren't too bad. She's great I like those almost overly enthusiastic people but she just explains things really simply and I have tried at least 4 of her recipes and they have all been really good. Shoot your recipe through, I have a pile of printed recipes on my kitchen bench that I work through until they are made and then file them. Cheers I'll send it to you by next weekend (generally because I don't have my PC on through the week), but I WILL send it to you. Look for it in a PM next Saturday. One of my favourite things to eat, made an Omelette for Brunch yesterday, simple Cheese, Bacon and Tomato. Didn't have any Spring Onion or would have added that. Ingredients - two eggs beaten, Bacon, Tomato, Tasty (Cheddar) Cheese, dried parsley and used a sprinkle of Garlic Powder. Bacon in the pan with some butter (1 TSP) Bacon Cooking Eggs in, I am lazy and just pour them over the bacon once it's cooked. Tomato and S&P Cheese + Parsley - Heat Off Lid On for about a minute till the cheese properly melts and the base is cooked but not overcooked Done

So made the Creamy Chicken Stew with Bacon & Parmesan by Tatyana's Everday Food and let me just say it was to "absolutely delicious" as the guest of honour said at our dinner last night. What I would also say that the video never shows is there is a lot of preparation and it helps to have an extra set of hands which in this case was my daughter. I planned 30 to 45 minutes of preparation but it took an hour, this was partly the chicken released too much liquid and we had to cook it twice to get it browned. Most of the time was cutting stuff up before we even started cooking. If it had just been me it would have probably been an hour and a quarter. We had to chop and dice, 2 Celery Sticks, an Onion, 4 Carrots, 8 mushrooms, 3 potatoes (later in the process), Rosemary, Thyme, 6 Cloves of garlic and 4 Chicken breasts. Included in the prep. was the browning of the chicken, the cooking of the mushrooms and putting those both aside, cooking the "Mirepoix". That is the bacon, butter, the carrots, the celery and the onion, then after about 10 minutes adding the herbs, Fresh Garlic, Rosemary and Thyme and the dried herbs Basil and oregano for a few minutes. Then adding the White Wine, the Plain Flour and combining it all well. Then to the actual cooking of the stew and I cooked it for just under two hours, the recipe calls for 1 1/2hrs. Add the Chicken Stock and return the Chicken and Mushrooms and simmer for 45 minutes. Add the potatoes after peeling and dicing them and cook for another 30 minutes. The recipe says to then add the cream and parmesan cheese and serve but the video says to cook it for another 1hr from that point IIRC which I did and then added the cream and parmesan and let it rest for 30 minutes. So as you can see it is a fair bit of prep and the cooking process is not completely hands off. Well worth it if you have the time to do it, I would actually do whatever prep. I can the day before TBH and put the stuff in the fridge and cook the next day. I served it with Rice, Broccolini and Zucchini. I would definitely make it again. Pic's, there are a few so I will spoiler them. All the ingredients chopped and ready except the wine which was still in the fridge Fresh Rosemary from the garden Chicken cooking and cooked Mushrooms Cooking Mirepoix cooking Then with the white wine and mushrooms added back Got distracted after this but added the cream and Parmesan We made Cheesy Mustard Croutons as well to serve with the dish The finished product, picture from the website but this is exactly what it looked like for me as well, even the casserole dish is the same colour. Then remembered halfway through eating to take a picture.

So yesterday cooked this Lamb curry and it was super delicious, Bunny Chow. Apparently the name is a from an Indian word "Banie" and the recipe and serving style came about as in South Africa where coloured people were not allowed to "dine in" at restaurants. So Indian cooks would make the curry and then use a bread loaf for people to take the curry away in.
This guy is one of my favourite cooks, he's a little bit crazy but his recipes and tips on technique etc. are really great. Not sure what the thing about the fridge is???
Anyway I was totally distracted with other issues and was cooking to stop me getting angry, so forgot to take photos so here is a the video I used to make it. I type notes from the video and use those.

I decided to try something different today. I had taken out some beef stewing meat and was going to do my usual slow cooked hearty roast beef stew.
However I decided to make a it a roast beef curry stew instead.
I put the beef chunks with beef and chicken stock in the slow cooker and cooked for about 3 1/2 hours. I then added a bit of ginger (not too much) and a some curry powder. After a good mixing I add the carrots, peas and potatoes. Cooked for about another 3 hours and then added a bit of corn starch to thicken.
It was really good, I added just about the right amount of curry, to give it a nice curry taste without over powering the whole dish. I'm glad I tried it.

Ground beef has been cooked, I added mushrooms and red peppers. Once that is cooked I will add some stir fry sauce and some steamed broccoli. Then put that on top of a bed of rice. While doing this I am sipping my homemade Pear/Raspberry wine.

So the last week or so I finally used a small kitchen gadget I've had in my cupboard for years but never used. I think it belonged to my mother. Just a small hand meat tenderizer. It has wheels and teeth like this one but is encased in a plastic handle. I'm really sold on this thing. I had some really thick pork chops and I have a very tough time cooking them just right when they are thick, so I finally tried the wheel and gave the chops a real going over on both sides. It works so well, breaks down the tissue and fat ring around the outside, cooks up really nice and it was just as tender as can be whereas it was simply tough before due to the thickness. Cooked them in my hot air oven, seasoned and served with apple sauce. Also had some steamed Broccoli and cheese sauce. Yum yum!

I have made a few things lately but not posted photo's as I have been short of time and lazy. Made a really nice Creamy Bacon, Spinach, Broccoli and Potato soup. The dominant flavour is the Broccoli but it also has some Italian herbs and Fresh Basil in it which makes a really nice, fresh background taste. Made a cottage pie with ground beef or Mince as we call it here and bacon a couple of nights ago. My daughter is leading a drive to eat more vegetables so filled it full of veggies, some non-traditional. It had onion, carrot, corn, broccoli, peas and spinach in it plus mash potatoes on the top.

Oh boy what a delicious supper, so simple and easy and sooooo tasty.
Small roast beef with a bit of steak spice on top and some left over oriental dipping sauce from last nights supper.
Slow cooked for a good 8 hours.
Just shredded the beef and put it on bread and put some of the drippings on top. Yum yum yum!

Here's the first of some 'tip' about cooking.
When you peel skins off onions and garlic cloves, only cut off the root end before you start to peel. Keep the stalk end. I don't know why, this is a slight mystery, but it's much easier to peel it when the stalk end is undamaged. When you're done, then cut off the stalk end.

It's June, and I think it's time to talk about crepes. As you probably know, midsummer is an important celebration in the North. In Finland, the feat's paganist roots have been preserved in the folklore, which is full of folk magic and rites. But enough about that; we're here for the crepes. Curiously enough, there's no one food, that's associated with midsummer, but there is crepes. It's quite common to use a muurinpohjapannu (bottom of the fireplace pan) for a large amount of guests. It's a largish steel pan, almost flat with feet. Like the one below: And as you can imagine, it's perfect for making crepes, which are called muurinpohjalettu (bottom of the fireplace crepe). As an avid Paris lover, I can confirm, that Finnish crepes and French crepes are pretty much identical. Which is to be expected, since apparently crepes have been made in Europe since the Roman times. It's a no-brainer really, because if you have flour and eggs and a piece of flat metal, that's the first thing you are going to try to make. Muurinpohjalettu pictured below: The idea behind the muurinpohjalettu is, that's it's big enough to make you full after the meal. And the fire is kept hot enough, so that the crepes are done in quick succession. How about you folks, do you have a traditional summer dish?
