Like a lot of children I wasn't very fond of veggies, now I love them. The last one that I discovered I liked was brussel sprouts. I'm still not fond of mushy carrots or mushy squash, but that's more a function of texture than taste. At my age it's less a function of whether I like foods than whether those foods like me. I love onions but eating more than just a taste has unfortunate effects. #TMI

Could not stand green peppers and never understood why my mom loved them so much...now I like to put them in most of my sauces and I even enjoy them raw.
I have found some meats that I used to love growing up, now are hard to digest and they don't sit well in my stomach. Like steak, I love the taste of steak, but it sits heavy after I eat it. Same with pork chops. I can eat ground meats most times though as long as their extra lean, and I'm good with chicken and turkey, as long as I don't eat too much of the skin.

Corned Beef and Noodle Casserole. Didin't like it when I was a kid but rather enjoy it now. Mom will even bring me over leftovers of it. I was a picky eater as a child and still am as an adult. I don't know why I didn't like it before, its not like its tuna.

Growing up I hated beans. It was a texture thing for me. Now I love them, especially as I try to have less meat in my diet in general. Still hate baked beans though.
Things I used to like... ultra sugary things like sweet tea. Unsweetened tea is so much better now. You can actually taste the tea instead of just sweetness.

I wasn't big on a lot of fruits or veggies as a kid barring some exceptions like oranges, but now I dig various kinds like pickles and broccoli (especially with cheese, yum!).

Nothing. Really nothing. There are things which I liked somewhat when I was a kid, but love now, like cabbage, cauliflower. There are things which I loved when I was young, but which I just like somewhat now, like smoked things, fish and meat. Also, I think I enjoyed highly processed factory foods when I was a kid. I don't anymore. I much rather eat quality food made from first rate stuff. Otherwise, my taste has been pretty stable.

Boarding school ruined a lot of meals for me, from spaghetti to lasagne and even mashed potato.. It took my bf cooking those meals for me to start to like them xD
I am still an extremely fussy eater though, mostly due to eating something I have never liked (for example tomato from the vine or mushrooms) causes me to vomit which is why I don't like the thing.

They must've used some pretty sketchy spuds to make you dislike mashed potatoes! Or just a really crappy recipe...were they instant potatoes that used "potato flakes" instead of real, fresh ones?

I honestly cannot think of a single food item / dish I disliked at first but have grown to like over time. I'm very consistent in my likes and dislikes, what I like I always like, what I don't like I never like. Its been like that for as long as I can remember with all things, even people.

Used to dislike bananas, until recently discovering organic bananas. What a difference, from flavorless country to flavor country. Just make sure when you buy them they look ripe enough, as for some reason they don't ripen well enough in my place compared to supermarket (maybe the temperature has something to do with it). As when it's green and they don't ripen well enough, they don't taste as good even if organic.

Did not like yogurt for years, now I love it, especially plain, non fat yogurt. Tastes like buttermilk which i have always loved.
Did not like Broccoli as a kid, I now like it. I still do not like it's ugly white twin Cauliflower though unless it is slathered in some kind of sauce.
Used to wretch at the thought of fresh tomatoes in a sammich.
I used to be a big dessert guy but hardly ever have dessert anymore.
A lot of foods can taste quite different depending on how you cook them. ie. for your cauliflower there are a few examples I've tried but can't find the recipes. Think one of them was using sour cream or egg so you can bread it in bread crumbs, then bake in oven or fry (believe the sour cream is the better tasting example if I didn't mess up the recipe). Or something along those lines. Another example is spinach. Not sure how folks can eat this stuff steamed (ditto for many other veggies), but when you make a cream out of it. Perfection. Here's one recipe I've found that looks similar to how mom and folks back in Romania make it; Hmm, so good. So good.

To me all bananas taste the same. I was expecting the bananas fresh from the many plantations on the Canary Islands to taste amazing, especially after my dad told me they would. Yeah, no. Still tasted like any banana I buy in Germany... The big African ones are different, of course. But regular bananas? All the same to me. I LIKE bananas, but they are one of the very few fruits where there isn't a huge difference. But maybe that's because to me it's not about organic and non organic but grown in my own garden/picked wild and bought. To me all grocery store fruit and veggies have no real taste. Apples are the worst. I don't buy apples. Ever. My family has an apple tree and I can go "steal" apples from the fields 5min away from my apartment. I'm fine with eating them in season. And we freez home-made apple sauce for the rest of the year. The biggest game changer in the past few years was dark chocolate. HATED it as a kid. Now I cannot eat milk chocolate anymore. Way too sweet. Going sugar free for a month and then forcing myself to eat raw cacao nibs for a while has made me realize how much sugar there is in everything. My taste buds adepted quite quickly. We can grow to like most things, I believe. It's the brain making do with what the body is fed.
Brain:
"Oh, you'll just keep feeding me this disgusting crap? No more of the good stuff? That's how you wanna play it, huh? FINE. I'll just LIKE this shit now so I don't kill myself! There, I won."

I would never eat toast plaijn without lots of butter/marg or peanut butter etc but now I will have just plain toast, nothing on it and i appreciate the actual flavor of the bread.

I used to have a REALLY sweet tooth, now I hardly ever eat stuff that's oversweetened; it makes me kind of sick. I used to hate broccoli and now I think it is one of my fav veggies. Heard someone say processed sugar can be addicting as heroin. Haven't really looked into it yet, but can attest to back in my soda drinking days that it can be pretty addicting. Every now then, say if I'm at A&W and I see one of those juicy chilled filled mugs of root beer, I'll weaken and buy one. Can't even drink more then half, followed by not feeling well. Generally stopped drinking juice unless it's my own. Homemade lemonade with local honey & tea with honey is my go to filler for juice craving. Dairy Queen Ice cream cake is the exception. As processed and sugar filled as they are, it tastes oh so good. Am getting some today.
