One of the updates for MEA helped the facial animations ALOT however they need to fix the hair! Especially dark hair since it looks like a cheap wig half the time. This is one of those pet peeves I have and to me is actually a big deal. What do you want fixed.
DAI had horrible hair as well. I never played anthem so I don't know if it had that problem. So I am not just going after MEA for this.

Menus. The entire user experience for me is awkward with a lot of nested items and not very well laid out. It really feels like their menus are designed to be artistic over practical and this a problem that keeps getting worse with the more things they add to their games. I think Mass Effect: Andromeda and Anthem are the two worst offenders.

Lack of playable space combat. I love space combat. Possibly my favorite aspect of sci fi. I just eventually want the ME series to let me play it, at least once.

I actually enjoyed the planet to planet travel, but then the whole space flight aspect was always something I liked. With something like Elite: Dangerous, you get accustomed to the long wait times to get to celestial bodies that are a few Au apart, and I feel gets a good visual representation. ME2 introduced what I felt to be a serious downgrade to the Galaxy Map mechanic. The toy Normandy you move around on the map totally defies the interface type system that ME1 had, and to rub salt in my eyes, introduced a thoroughly pointless fuel management mechanic, which adds absolutely nothing particularly meaningful to the game. The Galaxy Map in ME1 felt like I was looking at an advanced computer system through the eyes of Shepard, like a holographic touch interface that fed me all the info I needed. In ME2, was I now actually playing as Joker or something? It was ridiculous. If this was a flight sim, then those sorts of things are expected and welcome, since you can make meaningful upgrades to your ship to travel wherever you want more effectively, but that's just not how it worked in Mass Effect at all. There's no actual open exploration in space that makes this system work. You just have to get to these planets to maybe find points of interest, which doesn't even really happen here. It's ironic, because ME1 was the only game that offered that, and did it without us having to worry about resource management, which even then kind of half-asses it because moving around the system forever doesn't consume fuel, only when you travel between stars. I also kind of hate that 3 doubled down on this by also adding in the Escape Reapers system where you had to send these ridiculous ping scans in each system and get the lamest Mission Critical Failure if they caught you.

Have a solid plan when developing a game. Although I enjoyed Andromeda, they were spinning in circles up until the last 18 months. Same with Anthem, which I wasn't that fond of. Oh, and please, for the love of God, ditch Frostbite.

The skip button isn't that bad for me since I'm on console so it's just a tiny button and text at the bottom. But yeah being able to disable that would be nice.

I am surprised you are just hearing this now, for anytime someone brings it up to BioWare its what they say. Its been awhile since I read it, but I think that interview where Aaryn Flynn where he talked about the difficulties even said that it was their choice. I still don't believe the internet narrative that BioWare would have not had massive problems using any other engine either and Frostbite was the sole reason these problems existed. Maybe one or two issues, but the majority I think are internally BioWare, but I guess for some its the narrative they want to spin to get clicks. Edit: I forgot to mention EA allowed Respawn which they outright own to use Unreal to make Fallen Order, to me if they were forcing everyone to switch over they would have mandated Frostbite for a Star Wars game since Respawn would have had to go through EA to get the okay to make the game.

I want my character only to use weapons I actually equip them with in cut-scenes.
I'd like to see whether or not the character is a biotic to play a role in cut-scenes and the story.
Character class in general should matter a bit more. (it should also be locked in, don't do what Andromeda did)
I want more squad interaction and unique dialog depending on the context. For example, I hate that in Mass Effect 2 Tali and Garrus never have anything to say on one another's Loyalty Mission. That made ME2 feel sloppy at times.
No or very limited auto-dialog. The core of Mass Effect is the dialog and so taking that out of the player's control is unforgivable.
A more nuanced morality system that has more thought-out consequences and reactions. For example; Samara and Jacob should react strongly on Zaeed's loyalty mission if you choose to abandon the workers. Characters ought to react if you refuse to give medigel to injured civilians. Some should react more favorably to ruthless and fast renegade interrupts or choices. In general I want characters to stick to their beliefs more and not worship the protagonist. Tali should be more loyal to her people than she is to Shepard, or at least feel torn over it. That kind of thing.

They probably expected some level of support in using Frostbite that does not appear to have materialized - support they would have gotten from Unreal. They've also had to deal with getting people trained on Frostbite, and then EA snagging them to work on projects for other studios, leaving BioWare in a bind.

Ditch the multiplayer. IMHO BioWare got lucky on ME3 MP but they've tried way to hard on coping what was really just dumb luck for the MP modes for DAI and MEA just don't work and/or not many seem to care about it, while ME3 MP is still highly thought of. Now while I loved the fact that I could send APEX teams to basically fight in the MP mode I have no curiosity to even look at the MEA MP much less play it like I did for ME3 before I got bored with it and I only played DAI MP to get the Dragon Decor for Skyhold.
Ditch the character classes.
Look I play a more mix and match style and locking my character who is supposed to be a varied and talented commando in various roles just doesn't make sense to me, there are some powers/skills/abilities that I use more than others and some I don't use at all, I like the ability to have access to say Heavy Armor but I like duel wielding melee fighting and ARs as my main firearms, but maybe I use certain biotic powers like Nova, and tech drones. Why should I be locked into a class where the access is locked because of some outdated skill system just allow me to pick and choose the powers/skills/abilities that I feel comfortable with and ditch the whole sci-fi version of the Warrior/Thief/Mage class systems.

I like the MP, but to each there own on that.
As for classes, I generally agree you can ditch them. But, I didn't like how Andromeda did it with a massive pile of skills you'd learn. Have a limit like 8 skills or something. Or 6 actives, 2 passives. Maybe have some powers that can't work together. Using Andormeda as an example some powers you could learn from the get go some required 9 point investment in the tree. Maybe only one 9 point investment power. The only nod I'd give to warrior/thief/mage would maybe be the passives with some focused on powers, others on shooting people in the face etc. Allow people to respec for free, so those who want to try everything in one play through can.

I'm not sure why they would stick with something that caused them lots of headaches, stress and even mental illness. Unreal did none of this. It's like using something which wasn't designed for the purpose they wanted, so they tried to basically hack something together with the limitations of the engine.
In other programs like Flight Simulator X, it uses a specifically designed engine for the purposes of flight simulation. Some people suggested they should go with Unreal Engine 4 for the next sim, but they fail to realize that even though Unreal Engine 4 produces nice looking graphics, it is not meant to be used as a flight simulation engine. They whine about performance issues, but fail to realize that it renders way more stuff than your average game, due to trying to render the visible horizon of Earth (120 km squared) plus the thousands of unique object models and millions of models in total. That's why you're running at 25-30 FPS instead of 100 FPS on higher settings. In fact most flight sims run around that framerate.
A lot of the performance issues such as 3D buildings and such and there being so many of them, with lots of different variations of each come down to an DirectX API bottleneck, not a problem with the engine, as I discovered. Moving from DirectX 11 to DirectX 12 has pretty much made 3D buildings pretty much cost next to nothing to render on my system. Where as before, you could easily lose half your framerate because of it.

The problem with MEA's MP mode is they stripped all the good parts of ME3's version out of it. They reduced MP map sizes trying to use the increased vertical as validation but it doesn't change the fact that you can easily get swarmed on the smaller maps. In ME3 a lot of classes were capable of their own detonations of their powers but from my play in ME:A they stripped a lot of that capability out. So now you are far more reliant on other players to effectively pull off a power detonation. Which might work with 4 people with mics cooperating in a competitive tournament style but not as much with randoms with no mic that you are more realistically likely to play with.
And even worse they removed the power cool down bonus for being under weight but kept the power cool down penalty for being over weight. Being able to rely mostly on your powers by doubling the cool down speed making players less dependent on just shooting bullet sponges is what made ME3 fun. While in MEA they went the opposite reducing your ability to use your powers and forcing you to rely more on your guns regardless of what class character you pick.
It wasn't dumb luck they just learned all the wrong lessons from what made ME3's MP so great and implemented all the worst possible negative aspects.
Classes exist because it is impossible for someone to train to be both a master of biotics and a master of tech. Much in the same way you have doctors that are trained in specific fields because it is impossible for a single person to be a master in the entire human biology.
And I'm the opposite of you saying to bring them back. They can be given a bit more flexibility but without classes it renders 90-95% of all abilities as pointless to ever use. Rather like the joke about every Skyrim character becoming a stealth archer I kept going back to more or less an infiltrator class no matter what I started as. Because it is just so perfect that it renders everything else meaningless.
Cloak allows me to avoid damage and get shots off without worry. And with the final evolution of cloak I can shoot and fire off a power before de-cloaking allowing me to deal some serious damage to everything. Overload handles shields and incinerate deals with armor. And throw on the assault rifle that can easily deal with close, mid and far range and you just curb stomp so so so so so many things so easily.

Ditch the multiplayer. IMHO BioWare got lucky on ME3 MP but they've tried way to hard on coping what was really just dumb luck for the MP modes for DAI and MEA just don't work and/or not many seem to care about it, while ME3 MP is still highly thought of. Now while I loved the fact that I could send APEX teams to basically fight in the MP mode I have no curiosity to even look at the MEA MP much less play it like I did for ME3 before I got bored with it and I only played DAI MP to get the Dragon Decor for Skyhold.
The problem with MEA's MP mode is they stripped all the good parts of ME3's version out of it. They reduced MP map sizes trying to use the increased vertical as validation but it doesn't change the fact that you can easily get swarmed on the smaller maps. In ME3 a lot of classes were capable of their own detonations of their powers but from my play in ME:A they stripped a lot of that capability out. So now you are far more reliant on other players to effectively pull off a power detonation. Which might work with 4 people with mics cooperating in a competitive tournament style but not as much with randoms with no mic that you are more realistically likely to play with.
And even worse they removed the power cool down bonus for being under weight but kept the power cool down penalty for being over weight. Being able to rely mostly on your powers by doubling the cool down speed making players less dependent on just shooting bullet sponges is what made ME3 fun. While in MEA they went the opposite reducing your ability to use your powers and forcing you to rely more on your guns regardless of what class character you pick.
It wasn't dumb luck they just learned all the wrong lessons from what made ME3's MP so great and implemented all the worst possible negative aspects.
Nope. There are kits that can self detonate of course. Cooldown was moved to extra XP points. Also I dont know where you got that "use only guns" wtf. Yesterday I didnt use any guns and got to #1 on scoreboard, using Asari Sentinel... maybe you havent played it since 2017 april? I and many others think they actually made the MP better, though there are somethings that could've been thought out more. MEAMP is actually fun, as me3mp wasnt fun at all even with playing some 'friends'.. and I rather forget that it existed at all

Lack of playable space combat. I love space combat. Possibly my favorite aspect of sci fi. I just eventually want the ME series to let me play it, at least once. Only if it's optional, like in SWTOR.
