In the genres of sci-fi and fantasy, both inundated with superficial attempts at characterization and worldbuilding and generally lacking depth, I find it increasingly difficult to hit on series I find truly enjoyable. I thought I'd start a top ten list to see what others have hit on and maybe finding something new to "read" (mostly listen to audiobooks these days). Let's see if this goes anywhere.
1. The Wheel of Time by Robert Jordan & Brandon Sanderson - books & audiobooks - excellent characters, world building, Matt Cauthon is simply the best character ever. Books 7-11 really drag though and feel like those could have been condensed into 2-3 books.
2. The Traitor Son Cycle by Miles Cameron - audiobooks - a recent discovery I made last year and have already listened to it 4 times. Best description is it's King Arthur meets the Witcher. Another series with excellent characters and world building.
3. Old Man's War series by John Scalzi - books & audiobooks - a very simple read/listen but with depth, excellent humor, and has the greatest hook of any book I've ever read.
4. The Witcher series by Andrzej Sapkowski - audiobooks - I actually avoided this series for the longest time assuming it was in the vein of the old Dragonlance books...boy, was I wrong. Really good characters and world building. I particularly liked how the first to books take a series of short stories to tell a larger one and set the stage for the subsequent books.
5. Dune Series by Frank Herbert - books & audiobooks - One of the series I devoured when I was younger and influenced me as a whole. Considering this series is pushing 60 years old and stood up to the test of time tells you much.
6. The Broken Earth series by N.K. Jemisen - audiobooks - I jumped into this series because each of the 3 books won the Hugo Award (best scifi/fantasy) in consecutive years. I may be a bit biased on this one 'cause I'm a bit of a geology geek of which the author builds the entire lore around (brilliantly). Either she shares my passion or she did a ridiculous amount of research to write this series.
7. Hyperion Series by Dan Simmons - books - more brilliant lore building and interesting characters. The Shrike is the best, most terrifying enemy.
8. Red Rising series by Pierce Brown - audiobooks - This is hard sci-fi and if you like themes like classism and revolution you will definitely appreciate this series.
9. *Kingkiller Chronicle by Patrick Rothfuss - audiobooks
10. Gentleman Bastards by Scott Lynch - Locke Lamora is one of the truly great scoundrels in storytelling. I've listen through the 3 books in the series...awaiting book 4.
*series unfinished

Dunno if I can do a top 10 and I only read, never got into audiobooks. (Apparently I can remember 10. Yay.)
I like plenty of what you've already got. Currently, finally, reading Dawnshard by Sanderson.
***
1) The Prince of Nothing Trilogy by R Scott Bakker (My personal favourite series of all time.)
2) Demon Cycle Quintet by Peter V Brett
3) Gentleman Bastards by Scott Lynch
4) Codex Alera series by Jim Butcher
5) Boreal Moon Trilogy by Julian May
6) Lighthouse Duet by Carol Berg
7) The Long Price Quartet by Daniel Abraham (pen names M. L. N. Hanover and James S. A. Corey, authors of The Expanse.)
8) Thief's Magic by Trudi Canavan
9) Engineer Trilogy by K.J. Parker
10) Tales of Einarinn by Juliet E Mckenna

Gentleman Bastards by Scott Lynch Almost added that but have only listened to the 1st book...which I really enjoyed. Locke certainly makes for an entertaining protagonist. He's such a shit-disturber. Book 2 is good, fun, but a bit lacking. Sort of a diversion. Book 3 had me in stitches and gets into the real meat of the series. The wait for Book 4 has been pretty lengthy. Several years I think. Unfortunately, IIRC the author has publicly stated depression and anxiety were really getting to him.

I don't think I can really do a top 10. But here are a few, note, not all are necessarily incontrovartible recommendations in my book, hence the little text blurbs. Wheel of time series - been listening to the audio books on and off voer the last 10 years or so, it's massive, but they narrators are great. Hyperion Cantos - books are fantastic, audiobooks: heard a sample, seems pretty good. The Martian - Fantastic hard SciFi book, audiobook is apparently read by Will Wheaton, so I could imagine it's either pretty cool or it would just go on your nerves. Witcher book series - since it's in the OP's list, here is my 2 cents: good but not as good as I had hoped to be honest. The Foundation books - Great old school SciFi from the 50s. If you can live with some outdated tech terms, it's brilliant The three Mass Effect novels (Revelation, Ascension and Retribution) - Decent books, given that they are video game tie in novels. They do tell their own independent stories though, which take place before the respective games of the trilogy. I am listening to the audio books at the moment while replaying MELE and I find them quite enjoyable. Just act as if the horrible forth book, Deception (written by a different author) never existed and you'll be fine. The Expanse - both the books and the audio books are fantastic. IMO, this is currently the best we have in the SciFi genre. Can't wait for the final book 9 to release in November.

Hmmmmm. A lot of my favourites are stand-alones, but ...
1. The Lord of the Rings by J.R.R. Tolkein. (Boring answer, I know, but true.)
2. Discworld by Terry Pratchett. (Has its peaks and valleys, but taken as a whole it's an amazing achievement.)
3. The Saga of the Exiles and Galactic Milieu by Julian May. (Yeah, I'm counting the whole nine-volume epic as one thing, try and stop me.)
3. The Parable of the Sower/The Parable of the Talents by Octavia Butler. (Does a duology count as a series? I'm listing it anyway!)
4. The Windrose Chronicles by Barbara Hambly. (And the Darwath Chronicles. And various other series. Hambly is criminally under-rated.)
5. Imperial Radch by Ann Leckie. (Probably my favourite science-fiction world building ever.)
6. Machineries of Empire by Yoon Ha Lee. (Unless this is my favourite instead, but it's more science-fantasy so maybe I can count both.)
7. The Xenowealth Series by Tobias Buckell. (I think Buckell is the best action writer working today.)
8. The Oxford Time Travel Series by Connie Willis. (To Say Nothing of the Dog is my favourite, but all of them are good in different ways.)
9. Otherland by Tad Williams. (I have such fond memories of reading these back when I was young and the internet was new and exciting.)
10. His Dark Materials by Philip Pullman. (Daemons and angels and bears, oh my.)
Also, it was originally comics rather than prose but Neil Gaiman's Sandman now has a fabulous audio adaptation that's well worth listening to.
Unfinished honourable mentions: The Locked Tomb series by Tamsyn Muir and the Murderbot series by Martha Wells. Each Murderbot story stands pretty much on it's own, so they're well worth reading/listening to even without the rest of the planned series, but The Locked Tomb currently ends on a brutal cliffhanger that won't be resolved until next year. I also loved the first volume of Robert Jackson Bennett's Founder's Trilogy, but haven't found time to read the second one yet.

Because of this thread, I'm re-listening to the Harry Dresden books. Jim Butcher is a good author, but hearing James Marsters read Jim Butcher's words is the difference between a lobster roll and lobster thermidor.

I wouldn't say its the best science fiction series ever, but the Horus Heresy series is a halfway decent read.
If nothing else it does help flesh out the setting and add nuances of motivation and perception to factions like the Imperium and those that fell to Chaos.
"The First Heretic" is a particularly fascinating read, as it shows that the fall to the powers of the Warp wasn't because people wanted to be evil for evil's sake, but because of lies and a rejection of those who were the most zealous to the ones in power.

7. Hyperion Series by Dan Simmons - books - more brilliant lore building and interesting characters. The Shrike is the best, most terrifying enemy. I just recently tried these out and I absolutely loved Hyperion and Fall of Hyperion- easily some of the best sci-fi I've read in a long time- but I didn't love Endymion at first, and only recently started making a 2nd attempt to finish it. I am finding it much more engaging this time around for some reason. I still don't love the protagonist (he seems sort of bland and vanilla compared to the awesome diverse cast of characters in the first two), but its definitely a super interesting world/setting, one of the best in sci-fi imo.

* Imperial Radch trilogy (Ancillary Justice, Ancillary Sword, Ancillary Mercy) by Ann Leckie Just finished up the audiobooks on this one. Extremely imaginative and very satisfying. A bit difficult in the beginning because of complicated names and this weird gender ID swap thing happening. The reader did a very good job and really fit the characters in the world well. I would recommend and intend to listen to it again.

I've now finished the Hyperion series, and was pretty satisfied with it. The last 2 books aren't as good as the first 2, and the 4th book in particular is... a bit uneven. But it undeniably had its high points and I was fairly satisfied with the ending, and so I can definitely see why its considered a classic. Now re-reading the First Law trilogy to refresh my memory to read the new trilogy and stand-alone novels set in the First Law world, and if anything am enjoying it even more on the re-read (which is saying a lot). Idk if its top-10, but it certainly has that potential.

Re-reading (listening to audiobook actually) Dune series. On Heretics of Dune now. I'd forgotten how deep this series was philosophically. Frank Herbert is to Sci-Fi what JRR Tolkien was to Fantasy...was way ahead of his time.

I doubt there's a sci fi author that came after worth their salt that wasn't influenced by the Dune series. He's discussing things that no one was talking about back then...he was kind of prophetic.

A few more Warhammer 40k books/audiobooks that I would recommend to anyone even remotely familiar with the setting:
Prophets of Waaagh! by Guy Haley - This is a story told from the perspective of the Orkz, with the audiobook being presented as more of a radio drama than a simple audiobook. It's very entertaining and a fun look at the grim darkness of the far future that isn't grim or dark.
The Infinite and the Divine by Robert Rath - This is a novel from the perspective of the Necrons that manages to not only showcase the power of the Necrons as a legitimate threat but in a way that doesn't give the main characters overpowered plot armor (like many of the space marine novels do). It's also written in a way that respects the other factions and races of the setting without detracting from them in order to prop up the protagonists. All in all, I would go so far as to say that this is one of the better WH40K books out there.

Imperial Radch series has now become a personal favorite...I've listen through 3 times now...a great fresh perspective on "artificial" intelligence.

Expeditionary Force by Craig Alanson: Some really good characterization and world building with some truly hilarious moments. Unfortunately it becomes very formulaic so I stopped at book 3...still the early books are worth the credit/read. It's too bad the author went for volume over depth because this had the potential to be one of the greats.
Edit: Current on the 14 book (so far) series. It regains its legs around book 8 (not that 4-7 are terrible by any stretch). This is a series for people who like military sci-fi action as well as sarcastic and deadpan humor - something the author is truly gifted at writing.
Children of Time by Adrian Tchaikovsky: Very imaginative storytelling from altering points of view with deep insight to evolutionary process of intelligence and whether it ultimately dead ends. Highly recommend. There's a follow up book I've yet to read.
Edit: Current on the whole series. I actually think the 3rd book is the best.

Gideon the Ninth by Tamsyn Muir is a pretty good listen. Very imaginative...Tim Burtonish.
