I like how the Wild Horses add-on allows any follower to buy a horse. I was going to ask Serana to buy a horse, but she, er, brought her own.

So, despite being something of a "gamer" for about 12 years, I have, believe it or not, never actually played Skyrim and don't even know much about it for a number of reasons - medieval fantasy isn't my favorite setting, it sounded like it maybe wasn't worth playing if I *wasn't* willing to invest a ton of time in it, and I did try Oblivion back when I first bought a gaming laptop and got bored with it eventually. (Oddly enough, the game that really hooked me was Fallout 3, which I know is regarded as "Oblivion with guns" in some quarters.)
My favorite games tend to be the ones where I have some freedom to shape my own character through dialogue choices beyond just "OK, I'll do your quest" and "sorry, I won't do yours." In addition to the ME and DA series, I'd also give top marks to Life Is Strange, FO3/NV (though not 4), and the Witcher games in spite of their setting (like I said, not a big medieval fantasy fan). None of that is to say that I don't enjoy more linear games and/or those where your character is more restricted, but I'm less likely to invest 100+ hours in a game like that or replay it over and over again.
I haven't really done much narrative gaming for the past year and a half, but I kind of feel like jumping back in and maybe exploring a new game world. So what do you all think? Should I finally play Skyrim, or take an arrow in the knee and skip it? (I'm also thinking about Elden Ring, which I know has gotten rave reviews, but about which I also know very little other than that it looks like medieval fantasy.)

I made a similar post on a different forum, and somebody said it sounded like I might get bored with it, but that buying it on sale and focusing on the main quest and some of the sidequests might be worthwhile.

I hope you are playing on PC, otherwise my advice may not apply. Starting with the genre: Skyrim is a Open World Sandbox Fantasy game with some RPG elements. It has it's strengths, but storytelling isn't one of them. If you are looking for good stories, like in ME or Dragon Age, Skyrim may not be for you. Some of the quests are okay, but they won't keep you hooked for very long. I've always found, that Skyrim is at it's best when you make your own story. It should be noted that most of the time Skyrim plays like an FPS game; you have to aim before swinging a sword/casting a spell/releasing an arrow. If you like shooters, combat in Skyrim isn't all that bad. Then there's that exploring and crafting aspect. While technically not necessary, it is a big part of the game. I've always liked it, but YMMV. I recently upgraded my SE to AE, and can wholeheartedly recommend the AE version. I believe the SE+AE combo costs about $50 atm, which, IMHO isn't much for the amount of the game you're getting. And the new survival mode should make things interesting, haven't tried it yet though. Finally the mammoth in the room: modding. Skyrim has always needed mods, that's just the kind of game it is. I currently use about 30+ mods, mostly quality of life and graphics mods. You'll find that, that is considered a vanilla experience.  At the very least you are going to need those Unofficial Patches. How's that for starters?

My plan was to start with STEP and then go from there with the addition of some immersive lootable armor and weapon mods. Has anyone done a STEP install before and/or has any tips or recommendations for lore friendly non-gameplay-changing additional mods that are really worth it?
