If going back to ME2/3, I'll miss the superior galaxy map (hate that flying minigame), the individual cooldowns and combat in general (things like pull->throwing enemies into enemies), the characters (I like the crew in MEA), the Nomad (Hammerhead sucks and ME3 has nothing), biotic jumping/evading, the huge planet surfaces and the skill system and the story (ME2's sucked and ME3 was too depressing and contrived).
I probably won't miss the music (sadly it isn't too memorable).
If going back to ME1 I'll miss some of the combat now, but I'll thoroughly enjoy the lack of health/armour difference so you can lift/throw things like geth armatures, krogan and stasis thresher maws.

Jetpack,combat,nomad,exploration,andromedan weapons,etc...and the most:sticky grenade on my revenant.That is really funny shooting rain of grenades on enemy.

Much of what has been said from the enjoyment perspective. Drack and Peebee convos for sure, really enjoyed those. Still haven't chosen a romance yet, I'd like to romance them all.

I'd miss the customisation of abilities and equipment, the feeling of progress when preparing planets for colonisation, and some of the characters. Vetra, Drack, and Kesh in particular, and space Leliana, I mean Suvi.

The jet pack and profiles would be the only thing I would miss. I would very much welcome a return of ME3 cover system and over the counter pull kills although I don't miss shield gate so I guess there are 3 things I would miss.

Not much. Maybe the forward boost on the Nomad, although it seems the Mako was slightly better at climbing sheer clifts and is armed. Maybe the auto-duck. Aside from that, nothing major. The jetpack is fun, but there weren't many places, I feel it would help in the trilagy.
On the other hand, what I miss from the trilogy is the p/r options, not just the special dialogue options, the abbilty to be more bad ass. The power wheel, which made it more worth choosing which squad mates I took. The dominate and AI hack skills. The sqad mates. The way you traveled between planets in 2 and 3.
Gee, I seem to miss more from the trilogy than from ME:A : /

I am replaying ME2 now and the thing I miss the most from MEA is the enemies trying to attack you and get you out of cover in almost every battle. Most ME2 enemies stay back too much which makes the game too easy if you have a sniper or you are just patient, sit back and take your time.

The jetpack and Remnant VI/Poc. He's not quite a squadmate but he's cute and like the dog in Fallout or something -- I am getting a little too attached to Poc. Also, Vetra.
I also like the Remnant in general and would miss their presence a bit. The architects are cool enemies to fight, even though I do wish they had varied it a bit per level, and I love the vaults as concepts and as places to explore.
The armor choices/designs are also really nice in MEA.
