The Mage creature codex answers this. The best way to fight a mage is to get in close to prevent them from shaping the battlefield. If necessary, you lock their arms and bear them down to the ground. They're not armoured and generally not as strong, so you can incapacitate them easily. dragonage.wikia.com/wiki/Codex_entry:_Magetrue. well in term of lore, most people are fucked when facing a mage, most mages however don't have melee fighting skills so if you take them by surprise it could work, waiting in the corner than stabbing them in the back, let's say if you face a well trained mage and they see you coming unless you are a very skilled fighter you have little chance. being a templar might also help poison always works well, being a dwarf i guess. hmm... ooooh traps! as i said it's not imposible but if you are not well preppared, a templar, a dwarf, or a magekiller than the mage have advantage.

throw poison grenade at the mage. while he/she is coughing/gagging, use your throwing knives/bow or sword and shield. bash him/her with shield then go in for the killing blow.
bring your own mage to the fight
throw some grease on the floor. while the mage slips, use your bow
bring a lot of people with you
use poison tipped arrows
have plot armor
call the templars.

Well if you don't have magic of any sort, and if you don't have plot armor, the ideal answer would probably be "don't." Run away, hide, surrender, find the nearest templars or less hostile mage, whatever. Just don't fight the mage.
If you have to fight a mage without those things, probably the best answer would be to put an arrow in the mage's back. Ideally in a spot right above a vital organ, since if you merely wound a mage you're probably dead. For best results, poison the arrow with something that acts quickly. It doesn't need to immediately kill, it just needs to immediately incapacitate.
If you have to do it in melee, I'd say stab from behind through a vital organ. For best results, poison your blade with something that fits what I wrote above.
If you have to fight a mage who knows you're there, I'd say you're probably going to die. Probably your only chance is to close in however you have to, and then fight as dirty as you can. Throw dirt in their eyes, hit them in the ears, kick them in the sensitive bits, grapple them, just do whatever they look vulnerable to that you think will distract them from unmaking you. Don't keep going with that too long, though: look to have the fight over with as soon as you can, because like Thatsoneevildude said, the mage going abomination is a valid concern. For best results, have a weapon poisoned with whatever you think fits the last sentences of the above paragraphs.

If you're no good with a bow, what about a well-placed grenade? Jar O' Bees should do the trick, or at least allow you to run away to safety.
Alternatively just hurl a Qunari at them.

Well, yeah, but spirit warriors are mages. I was talking about ways for a non-mage to fight. Only for some members of the Chantry because they don't make a distinction between these two categories. The best way to defeat mages is by using runes or equipments that have spell resistance ,you put 5 items like that and you are immune to magic,so it doesn't matter what they cast on you they will do 0 damages.

Speed and under all that magic is the biology of a normal person. Poisons, arrows, stun bombs, and back stabs work well to rake down a mage. Rouge are best at taking down mags for a reason.

Saying they are mages is like calling a reaver a Mage
