This playthrough, I'm siding with the Templars, I just don't want to miss out on anything prior to making that choice, ie, I can go to Redcliffe and the like?

You can go to Redcliffe before deciding to recruit the Templars, yes. Dorian's dialogue will change slightly depending on whether you met him in Redcliffe or your first encounter with him is at Haven during In Your Heart Shall Burn.

Yeah you can still meet up with theem as you choose which faction you wish to side with at the War tableIn hushed Whispres is the mage quest Champions of the Just is the Templar one.

You can go to Redcliffe and meet Alexius, Dorian, Felix, and Fiona before going to Therinfal Redoubt to side with the Templars. I didn't know you could do that. Does it change the dialog any if you talk with Fiona, Alexius and Dorian then decide to go the Templar direction? Well, Dorian does complain after you reach Skyhold if you meet him then go to the Templars afterwards. Otherwise, the differences are minimal.

If you meet Dorian in the Chantry and go to the Templars, then he'll be angry with you, when you talk to him the first time in Skyhold. So I just talk to Alexius, Felix and Fiona and go "This letter looks like a trap" and don't meet up with Dorian in the Chantry to avoid disapproval. <-- if you don't meet him at the Chantry he doesn't disapprove of you going to the Templars.

I can't tell you about all the changes, but here's one sample: In the scene where you haven't gone to Redcliffe before completing Champions of the Just, he normally says, "My name is Dorian Pavus and I bring grave news from Redcliffe." In this scene where the Inquisitor met Dorian previously, he says, "Ah, there you are! I came to tell you what happened with the mages at Redcliffe. You aren't going to like it."

Dorian isn't too happy with you when you finally get to talk to him again at Skyhold but he gets over it. It also affects whether he talks about Alexius and Felix as though you have met them or not.
I prefer going the Redcliffe first as my decision to go to the Templars is based off the crazy situation there and my unwillingness to walk into an obvious trap rather than simply supporting the Templars. I've tried doing it without going to Redcliffe but going there fit my role playing better.
I wouldn't worry unduly about his disapproval. It just takes longer for his personal quest to trigger but just do the War Table mission hunting Venatori and you will soon make up the deficit. I romanced him off a Templar run and seeing him in Redcliffe first so it really isn't a problem.
