Technically you're correct in that they're absolutely required only to make the final killing blow against the archdemon in a Blight, but there are other benefits as well. There are occasional random darkspawn attacks, and it's certainly better if a group that's already infected by the taint handle it, rather than risk infecting some random soldier or farmer trying to defend his land. The main reason they remain as a standing force is because you never know when a Blight will happen.
Also, maintaining a trained force that is not beholden to any lord means they can spring into action at a moment's notice. Consider some of the dwarven forces in DAO. The evening before the final battle, you learn from them that house Vollney didn't send soldiers, preferring to protect themselves against political maneuvering. The Wardens would have no such issues.

Having Grey Wardens around as an independent organisation is probably beneficial to the world at large but I do question the necessity for all of them to take the Joining. The ritual itself is very wasteful of recruits who could otherwise still be useful doing general patrols and scouting. I also question whether the risk of contracting the taint is greater than the risk of dying from the Joining. So to my mind, between Blights when they are not needed at short notice to kill an arch-demon, it would be better to withhold the Joining unless the person actually did become infected, when it could then be used as an alternative to certain death.
People who live near historic entries into the Deep Roads, where darkspawn are more likely to surface on a random basis, are probably grateful for having an active order in the vicinity and appreciate the necessity for their presence there between Blights.
I would certainly agree with Nightscrawl that the independence of the Grey Wardens as a force not behold to any lord or state is a significant benefit to maintaining the order between Blights. However, it would seem that the current First Warden has somewhat negated that benefit by getting too embroiled in the political set up in the Anderfels. Of course this is probably what lies behind the conflict that was hinted at in Warden HQ at the end of DAI.

Officially, no. But there is something to be said for maintaining a standing army against a threat (Blight) that can literally erupt at any time.
But its not like they are just idly standing by and just waiting for a blight either. Darkspawn hunts, replenishing supplies and manpower, continuous study of the Blight and its creatures, the occasional minor political dealing to ensure future co-operation, etc. So long as they don't make any big moves outside of thier jurisdiction, I don't see any harm to have them wandering around. If anything they can prove to be useful buffer for minor darkspawn attacks.

Technically, no, they aren't needed. That said, how do you know when a Blight it coming? Do you want to stand around waiting for a Blight before making sure you have fully-"powered" and trained Grey Wardens? Or have to hope everyone who is trained survives the Joining? Not me. Continue to train, continue with the Joining and hope you're ready when the next Blight rolls around. Tbh, it's the primary reason why I sacrificed Hawke and saved Stroud. I figure that once Corypheus is gone, Stroud could help rebuilt the Grey Wardens, perhaps even guiding the Wardens to find a way to prevent anyone from ever taking control of them again.

Outside of Blights, the darkspawn frequently find their way to the surface. There were a number of times in DA2 and DAI where Hawke and the Inquisitor fought small bands of darkspawn. It’s valuable to keep the Wardens around to quell those eruptions.

Outside of blights they are required to hunt and kill in dangerous witches that wants to achieve the powers of the Dragons they are tasked to destroy(See how it was the first Warden to pressure the Orlesian one to start a Witch hunt).They are required to make researches about Darkspawns(which so far only one of them cared to do properly),and to deal with the 7 magisters which only them know about. They aren't required to fight random groups of Darkspawns,as any soldier who is careful enough can do it.
