Even Though I picked Control, my headcanon always will be the destroy ending with my Shep living. Basically after everything has been rebuild my Shep has retired from the military and joins security for Grissom Academy to work closely with biotic children and to be closer to Jack. Jack and my Shep has a daughter who is a biotic. And given that LotSB DLC suggest that Miranda was looking for a donor and trying to get pregnant, my Shep became her donor, and she has his son who is a biotic as well. It turns out the illum medical center was wrong about her infertility. The End. Maybe one day I'll write a fanfiction.
Edit: Also my shep begins to rebuild Cerberus, but this time they are truly focused on the needs of humanity. TIM did great things, but his methods were so wrong.

Renegade MaleShep Destroyed the Reapers. Was the only Shepard in the multiple universes that survived. This Shepard was always a humanity-first Shepard and made all the choices that focused on either Humanity's interests, or at least Organic interests over Synthetics. Synthesis felt like an abomination, and Control was a horrifying thought. Was also the most entertaining of the Shepards. All about his personal freedom and mankind's collective destiny. Romanced Liara & Ashley (chose Liara after Ashley rejected "sharing"), then Miranda (while still maintaining fling with Kelly Chambers).
Paragon MaleShep Synthesis. This Shepard was always the most idealistic, and optimistic. He was always about inclusivity and welcoming of various cultural & racial diversities that the Milky Way had to offer. He never made a humanity first choice, and managed to save both the Geth and the Quarians. He was a peacemaker first and foremost. He always encouraged his teammates and supported them through their trials. Selfless to the core and all about Law & Order & Justice. Romanced Ashley, never cheated.
Renegade FemShep Controlled the Reapers and became the galaxy's defacto Queen Bitch, enforcing her will anywhere, anyhow, and anytime; shaping the galaxy to the image she thinks is right. This Shepard was always about herself. She did not care about humanity or galactic inclusivity. Her main goal was bettering herself. If it did not benefit her, she couldn't care less. She was all about power and personal gain, and that is what she pursued until the very end. She wasn't a hedonist though, she had a vision of how things should be...and pity the fool who disagreed with her. Romanced Kaidan, then Garrus (nonchalantly breaking up with Kaidan's sorry ass in ME3).
Paragon FemShep Controlled the Reapers and became the galaxy's peacemaker and guardian. This Shepard was the most caring about her individual teammates, and tried to reconcile humanity's interests with what is fair to the rest of the galaxy, wherever possible. Always gave Cerberus the benefit of the doubt but still did all her best to make sure the galaxy saw humanity as their ally rather than their rival. She was my most tragic Shepard, all about trying to do her best for the galaxy and those around her. Romanced Kaidan but Kaidan died in Virmire, then got with Thane, but he died too; had an accidental one night stand with Javik but forever loves Thane.
If I absolutely were forced to pick which was canon, I'd go with my Renegade MaleShep, as he is the only one still living!

At this point, I've decided that Control is my favorite ending for a bunch of reasons. My canon Shepard is a Paragon who romances Kaidan.
My headcanon is that she creates an EDI-like mobile platform for herself pretty soon after the ending. If she's gonna be a God-Emperor-Reaper-Catalyst, she wants to make sure she stays in touch with, on a personal level, the people she's protecting and doesn't lose sight of that and become like the original Catalyst -- so out of touch with its initial purpose (to protect life) that it's become a monster.
She keeps the Council intact, and tries to be as hands-off as possible in galactic affairs and just generally keeps peace and uses the Reapers to guard the Citadel and all the species' homeworlds and colonies.
As far as what she does with her mobile platform robot body, I imagine there's no reason she can't stay as captain of the Normandy and continue to act as a kind of peacekeeper/Justicar type and settle small disputes here and there, similar to what she was doing as a Spectre. Given that destruction of that body wouldn't mean anything to her other than she'd have to make a new one, terrorists that try to strike at her generally try to do so by targeting her friends and loved ones. So she's pretty on top of keeping them protected.
Kaidan eventually becomes human Councillor.
It winds up a kind of sad headcanon, because she obviously then has to watch her whole squad and all her friends slowly die. After Kaidan dies, I imagine she and Liara wind up pretty close because of her lifespan. So she and EDI are Shepard's trusted advisors, and then eventually just EDI.
Probably at some point in the far, far future it might veer even darker as she does inevitably begin to lose touch with her humanity. But I love Dune and Warhammer 40k lore so honestly I'm pretty here for a God Emperor grimdark scenario.
