I was just thinking, "Man... that screws a lot of people over".
Soldiers, spies, scouts, alchemists, cooks, the cleaning staff. They lived off the Inquisition's pay and then suddenly everyone is unemployed.

They were all agents of the Qunari or Fen'Harel anyway. Mostly kidding. I assume they find other jobs, and those that can return to the jobs they had before (assuming they worked for some Lord or Lady who is still alive). Some of them, uhh... join Leliana's Chantry, or the Chargers, or the Wardens, or...

I suppose it depends on what the understanding was when they were originally recruited. Did Cassandra/Leliana or their subordinates tell them it was permanent or just temporary during the current crisis? I'd assume the latter because everyone would be hoping that things would settle down, a new Divine would be elected and she would then decide things going forward. As the new Divine was elected from the ranks of the Inquisition it would seem that she decided to leave it running even after Corypheus had been dealt with and that probably gave it a more permanent feel since people who had been there from the outset had been in post for the best part of nearly 4 years by the time of the Exalted Council. Even if it continues as the Divine's private army, it is still considerably cut down in size, so most of the auxiliary positions would go, plus a fair proportion of the armed forces. However, being able to give your last job as a member of the Inquisition probably amounted to a positive recommendation to any future employers and they had had the benefit of steady employment at a time when many people were displaced refugees from various wars, so that should have given them sufficient funds to tide them over during the time it took them to find jobs elsewhere.
Given the number of civilians that had died on the Exalted Plains and various locations in Ferelden, I should imagine that helping to restore the economy in those regions would still be a work in progress and initially work probably wouldn't be that hard to find.

I would think that a reduction of forces no matter what would've been quite logical no matter the circumstances.
A. after the war with the Elder One a lot of people probably would've left as they only signed on to fight and stop the Elder One. This does happen a lot in wars that after the war is over people just resign from the military and return to civilian life. B. With the Inquisition disbanding seems...obvious. C. even if you keep the Inquisition it did make reference to a massive reduction of forces and making the Inquisition more manageable.
These people probably will be fine as they *likely* had trades before joining up which they can return to. Several of the characters (like Varric, Harding, Viv, Cass...pretty much everyone except for Cole and even him) all went back to doing what they were doing beforehand. Even the ones who don't probably picked up valuable experience in the war effort which could be invaluable in any number of occupations in a post Inquisition world.

The Templars either remained in the Inquisition, became Seekers, or reformed as Templars. The Mages became their own independent circle, reformed the circle, or stayed with the Inquisition. The army downsized. The troops not remaining either went back to Ferelden or Orlais. The mercs returned to being mercs. The spies and scouts remained with the Inquisition.
