My kids are reaching 5 and 7, and at least for the big one, it would be a good time to start use the mouse (and KB) He played on tablet few times but only during summer.
Would u have a good idea on where/how to start ?
We tried a few webgames for kids but it wasn't cool nor efficient at first sight

The only standardized KBM controls I've ever used regularly are WASDF controls. I don't know if that was Doom originally or I just assume it was.
I actually don't know whether Animal Crossing or Stardew Valley would be on PC. If they were, I think they'd probably use WASDF for the avatars, and should be fine for kids.
Most of the games that I can think of are FPS games that would be for when they're older. Or are very old games that would be hard to find. There may be some kid-friendly flight games (is Starfox or anything like it available for PC maybe?)

Obviously the answer is to get them addicted to ME3MP. Train em young, kill reapas. *** The Undergarden Zen game, lots of mousing around. Very pretty, very chill. *** This game isn't specifically going to get them to use the mouse, but will help a bit and is actually quite fun. It's a browser based side-scroller puzzle game that requires teamwork to solve. (So they'd have to cooperate.) One uses WASD, the other uses the arrow keys. Fireboy and WatergirlBest of all it's free.
I actually recommend the game as something light and fun to play with your SO. *** Puzzle Quest 2. This one might be a bit too advanced, I dunno. It's a match3 puzzle game with a bit of generic RPG stuff going on.

If you can find them, I've always liked the old Desktop Adventure games from LucasArts.....Games like "Indiana Jones and the Fate of Atlantis" or "FULL Throttle"

Kerbal Space Progeam is one of the best educational games. Learn how to orbit by launching self built rockets to space. Includes little people to experiment sub orbitals on.
