I generally picked quests that netted some interesting conversation or presented a choice I had to make.
A pretty good example is Burdens of Command. When you get down to it, the quest entails an NPC telling you to go kill a random monster, but interacting with Command is fun and gives you some insight into spirits.
On the other hand, a quest like Let's Slay the Beast just involves killing an animal because it's there and the journal told you to.
I also picked a few because they had interesting battles.

I like the ones where you're unraveling a little mystery on the side, presented with an interesting choice/NPCs, or learn some interesting bit of lore.
But it's often the offbeat ones that are the most memorable, like Burdens of Command, The Ballad of Lord Woolsley, Judging Movran the Under...

I had to look up a lot of stuff on the wiki.
What hit me is that like... the "idea" of a quest was more interesting than the doing of the quest. Like the Templars and Apostates in the Hinterlands. The Why is quite interesting. But then you don't get to talk to either side, both sides attack you on sight and never try to ally. Which in the end, makes them little better than the bears you have to kill, they are severely dehumanized. So, I clicked them because, "Hey those were interesting" but were they FUN? did I ENJOY them? no more than I enjoyed battling a bear. So, I un clicked them.
I like the idea and feeling behind getting that wedding ring for the wife from the Templars that robbed her after killing her husband under false pretenses. but her response when I came back with it was horribly underwhelming. And then I couldn't even find it on the list of quests given in the poll, even though it was one of the more memorable for me.
So, what I clicked: Still Waters: This was a murder mystery I didn't even know was a murder mystery until Cole spoke his usual clue dropping. It's neat. The Knights Tomb: was completely excellent, and subsequent move to the War Table made sense. Chateau de Onterre: I've kind of gotten behind the Chateau having enough of a horror mystery to make up for it's overall lack of luster. The fact that it's so bright and pretty gives an edge to the horror in retrospect. Rocky Rescue: My first PT, Cole was with me 24/7, so his comments about how good he feels we helped them makes up for the repetitive thanks I receive from the villagers. Call me Imshael: Talking with him is Golden. Wish he could have been a temporary companion you then find out is evil incarnate and you then turn on him or don't. Valeska's Watch This just gave me the good Grey Warden feels and had some mystery too. I can't really remember teh quest in all the details, I just remember liking it. It used to be an outpost, it had to be abandoned against their better judgement. Before Grey Wardens went crazy with the faux calling, they were doing their job. Dalish Perspective: Boring, and annoying with the Halla, yet... opportunities for RP are there, and I LOVE LOVE LOVE the line the hunter makes on the broken caravel. Which is funny, because I can't know remember the wording. Something like, us Dalish need to move on from the past. IT made me wonder how many Dalish defect and go city. Lost Souls because it's the only reason to be there, I liked saving people directly like that. The whole location being dead town reminds you of the sort of health care available during those times to boot. My Lover's Phylactery was great, mostly because it wasn't two dead people talking to each other through letters. It reminded me of why I was for mage freedom, sad stories like that, while adding a dash of sympathy towards Templars in a way that didn't punch you in the face. Tomb of Fairel: Yay, for dwarven geniuses going into self exile for freedom and the safety of others. As I recall, his kids screwed it all up, but still. Sutherland and Company: I've...actually never completed this quest line, cuz apparently there is a trick to it I didn't know. But I've heard people love it, so I probably would too. Western Approach: I like killing Venatori, I love killing Darkspawn, and I liked the Chantry Trail. It had connections to Chantry shenanigans and cover ups.
Winter Palace was a bit of a fail for me. Next time I play will be a mods that opens all the doors.
I liked Sitting in Judgement on everyone. And I liked giving the Mages a better Tower to hang out in although there were more feedback on the latter. Should have been points towards a certain Pope.
Teh fears of the dreamers in the Fade gave me goosebumps. Especially the little girl one.

I usually like the strange /funny/mysterious sidequests a lot more than the straight forward figthing monsters quests
