Just wondering who you like to use. One good defensive team-mate for me right now is Blackwall as a offensive tank, but he also uses Horn of Valor to give the team Guard.

Usually I have Dorian, Cassandra and Sera if playing as a mage If playing as a rogue, I have Dorian, Viv and Cassandra If playing as a warrior, I have Dorian, Viv and Cassandra

I've found every companion can do well if built right, so I switch out party members constantly depending on which ones just "feel" the most appropriate. On that note, my favorite team is Bull and Sera ('cause they love it) and Cassandra ('cause she has experience with 'em). If I'm not playing a Mage, then eventually I end up subbing Cassandra for Dorian (and usually do at least once, even if I am) because I think Bull dragging his kadan into a dragon battle and Dorian whining all the way but secretly loving it just really suits the two of them.

I always have a tank; blackwall/cass, generally a meele damage; iron bull/viv a ranged rogue mostly sera but varric too sometimes and a mage with generally healing skills. When my character is one of them I don't take the same class companion needless to say

I always take Viv, unless I'm a Knight Enchanter. Slicing at those legs is so imperative, especially when the Dragon can armor itself. Dorian, to bring everyone back to life just in case. Blackwall, if built right and with crafted armor, can be a brickwall. Sera on Daggers.
Depending on my class, I choose between those 4. If prepping for a particularly hard Dragon, make sure you have the right kind of armor and weapons (electric, fire, or cold resistance,) if you're serious about killing it without fatalities!
And a Dragon Rune never hurts.

Champion Quiz Sera Dorian Bull
That's my go-to team, but if I'm not playing a warrior then I'll take Blackwall or Cassandra along instead, and replace Sera/Dorian with myself depending on what class I'm playing.

Hmmm....one tank, usually not Iron Bull who always seems to be "squishy." One ranged rogue. And two mages, one of whom has healing powers, and both of which have elemental powers that will hurt the dragon. (A mage maxed out on Inferno doesn't work out well against a Fire Dragon!)
Beyond that, I tend to specially craft armor for specific dragon fights so they have the appropriate resistance. I don't like having to rely on the resistance potions. I have each team member carry regeneration potions in case the health potions run out. Also, each companion should carry some type of grenade. I especially like confusion grenades in case the dragon calls its dragonlings to the fight.

Honestly I like to mix it up, but I tend to have a mage-rogue-warrior party along with my Inquisitor. My only real preference is for a sword and board type as warrior. Two handed warriors die fast.

I also mix up my dragon fighting team and who's built right.
Specifically, if I'm playing a mage, I'd go with Cassandra, Bull and either Vivienne or Dorian. For a DW rogue, Cassandra, Vivienne and Dorian.
In my recent Champion Inquisitor run, I had Cassandra, Bull and Varric. Varric's artificer skills are great against dragons.

In my last dragon fight I used Bull, Dorian and Varric with my mage Inqui - it works really well. After I gave Bull some feats from the tank tree, he is unstopable

Characters with good DPS or who can buff party DPS. Dispel is helpful, especially against lightning dragons. Ranged is nice against Fereldan Frostback since it goes to places melee can't get to.

On Nightmare, when I was doing my "kill all the dragon's as under-leveled as possible" run (pre Trespasser DLC), I ran a KE Inquisitor with Resurgence, Cass with Rally, Sera with Thousand Cuts, and Solas with Firestorm. I later revised that to KE Inquisitor with Mark of the Rift and Vivienne with Resurgence. Start by having the highest Crit Chance character toss Jar of Bees, then whittle the dragon's health down until it reaches the point where you can one-hit-kill them with Thousand Cuts. Solas was instrumental in applying Weakened to the dragon, so that it did less damage and took more damage.
Here's a vid of the first party configuration, XP Level 12 vs Level 17 Hivernal, pre-Trespasser -- you can tell because I was spamming Spirit Blade like there was no tomorrow. Notice that focus abilities only have 2 bars. Sucks being under-leveled!
With Trespasser installed, I'd probably just duo with Cass so she could spam Horn of Valor/Fortifyign Blast, while my Archer Artificer speedkills the dragon with Hail of Arrows and Leaping Shot, lol.

I've had my best results as a KE with Blackwall, Cole, and Solas specced with spirit magic.

Blackwall, a mage (usually Solas), and one of the rogues (usually Varric because of his snark). During a dragon fight, I will want to play with the flycam and not pay attention to the combat moves so Blackwall can last forever if he's built right. Varric: “Baiting a dragon. On purpose. Right. Should have stayed home today.”

I try and take Iron Bull with me against all of them (except final one), and Sera against two. For the one in the Storm Coast, I take Dorian along with IB, due to the good location-based banter when nearing the dragon nest. The first dragon fight has always been the one in Hinterlands, and it's usually Cassandra, Blackwall and IB, two tanks and IB dps... I've yet to start anything but a mage (on my fifth mage playthrough now xD ), but I'd probably switch BW for Solas to get some shielding spells if I was rogue or warr.
Iron Bull is mostly for good dialogue and the approval bonus.

Blackwall, Cole and Solas are fun to take along as a knight enchanter. Blackwall never goes down on me and Cole can inflict freakishly high damage. Solas provides reliable barriers and overall their banter is more pleasant than some others.
Usually I have to take Bull to every fight though just because it makes him so happy. Dorian and Varric come along to complete Team laidback personality.

Obviously the ones that can call on dragonlings certainly are.

Obviously the ones that can call on dragonlings certainly are. Its a case of significant sexual dimorphism. Only the females become High Dragons. Male dragons, drakes, only get about as big as a druffalo.

I always take Vivienne, even though I rarely use her otherwise. As a Knight-Enchanter, she's perfect for dragon-slaying. Cassandra is also a must for me, since her Rally ability has saved my party's asses so many times. And I can't leave Iron Bull behind, his enthusiasm is adorable.
