Which one did you get the most use out of? Did you just want as many dialogue options/recruitment opportunities as possible or were you trying to stay in character?
I loved the Underworld Knowledge perk. It worked really well for Cadash (especially when busting certain people out of prison). The connection to lyrium smuggling is so strong that it felt a little off for my Adaar, but I figured she'd know a thing or two about society's seedy underbelly what with being a merc and all (and possibly needing to make use of lyrium herself, either because she's a mage or because there were/are mages in her kith).

I love the knowledge perks, I hope we get them back in DA4 If I can I unlock all of them for the extra XP, but I only use those that I think that fit the character, and as I almost always a mage, my priority tends to be arcane knowledge. For my canon Inquisitor I sometimes use history knowledge too, since I imagine that she spends a lot of her free time in the library, so she probably learned a few things, but I don't like this one so much. I was curious about nobility knowledge and once I tried to use it more, reasoning that she knew nothing about that kind of stuff when she arrived but that in time she started understanding how things worked among nobles... but it didn't really fit her and I didn't like it much either, so never used it again (that I can remember). Underworld knowledge is something that fits better with some of my Inquisitors, so I have used it more often and I like it a lot. But yes, I definitely need to somehow make the options fit with my PC personality, one way or another. All in all, my favourite is arcane knowledge hands down

I've gotten the most use out of the Arcane Perk- but also think all mages should have had it built in.
But I value the nobility perk for keeping Sera from murder. And if I want to make Cass Divine. But think it should have been built in for Non mage Trevelyans.
I like the perks to give me MORE options on what to say. Up to me to then decide if that dialogue line is something my Quiz will say.
I value underworld knowledge the least. I can only think of two times it even pops up as an option and one is just flavor text while the second lets you recognize obvious spy is obvious? And should have been built in for Cadash.

There is a "chantry sister" outside of the Redcliffe Chantry that you can... Leliana some clues about not actually being a Sister, but only if you have the perk? Or maybe it's that she can't become an agent of the Inquisition if you don't have the perk. The flavor text is after siding templars/mages you get to say you have ties that can get the Inquisition lyrium. But regardless of whether you say it or not, the Inquisition has no problem getting lyrium soooo... flavor text is useless.

You can just find a letter lying around saying she's a smuggler, so I've never needed that.

I love all the knowledge perks and usually go for all of them, but Underworld is the most fun for me

I love all of them (they are a must have for me) but Arcane Knowledge if my favorite, as it seems to be the most used of the dialogue perks.

It's completely goal oriented for me. If I'm planning to Dance with the Dowager, I take Nobility. If I need to pick up Enchanter Ellendra and I don't want Viv in the party and I'm not a mage, I take Arcane.

I take all four of them as my first perks, and I pretty much use them whenever they're available. Usually it's Underworld or Arcane first due to early War Table stuff, and getting Deft Hands unlocked ASAP next.

I actually went most of my first playthrough never picking any of the knowledge perks except Nobility.

And should have been built in for Cadash. I agree that it makes sense for those backgrounds to have those particular perks. I suppose they decided not to do that to allow for a more customizable character - maybe your non-mage Trevelyan is obssessed with magic and never bothered socializing with their peers or reading a history book. I guess that's how people like Dagna come about!

I guess I would say I got more use out of Arcane Knowledge. It comes pretty handy during the Well of Sorrows, where the Quiz figures out what exactly the price of taking it is. Also, during Solas's quest where the perk let you know how to destroy the binding's on Solas's friend.
I get all the perks because I feel that regardless of whoever you choose as an Inquisitor, they will be schooled, especially in nobility things. Don't want to send the Inquisitor to the Winter Palace without knowing a thing or two about the Game.
I also like Underworld Knowledge, even though it might not make sense for my Lavellans to have it, as it just makes them seem more craftier.
Dutches: "Do you even know who is friend and who is foe?"
Inquisitor: (Underworld perk) "If I have learned anything, your grace. It is to put my trust in no one."
