Bad answer, part of me thinks its to make animations easier part of me thinks its  a lack of creative talent and the designers/artists came up with humaniods because its what they know. I did like the nod to the flying fish like creature which is nearly identical to one i saw in a documentary about potential alien life and how it could be different to our life depending on their planet. The flying fish was something to do with air density being so different you could swim through the air.
