What sucks is that Ryder can't even untangle thenslaves from Sam if they wanted to. They are stuck.

Yes and no. I don't wanna get into it because spoilers, but Ryder probably almost certainly isn't stuck with SAM forever. My personal bet is on Edi 2.0. 

Well SAM has to learn right? 

There are advantages plenty too. Who says profiles can only be used in combat?

Ryder: SAM, I am tired, please take over my body and entertain Peebee. While you are at it, play the game from last night for me.

I was thinking on this, earlier, as I watched Alec pass. (I'm not even sorry for this spoiler.) Lack of O2 wouldn't likely kill so fit a man within three or four minutes; especially one with SAM and ME tech to save his butt. We don't know what he was breathing, but it likely wasn't particularly deadly, in its own right. I think what killed him was transferring SAM. Rather than risk dying without doing the transfer, he executed the transfer, ending his own life. That's my take, at least.

More directly on topic, you'd definitely want to tell SAM to shut off his logs for certain activities.
