More Factions to have Reaper Sleeper Agents in them.
To balance out the Humans are Jack of all trades and Special tropes, Heavier exposure with Aliens and their technology. Krogan have more durable equipment. Also having technology that are inline with their respective species should be good to excellent in quality. For example, Biotic Amps and Implants that are made Asari should be superb.

The only thing I'd reasonably ask for is to include the originally recorded soundtrack for the music and sound effects in game. I don't know if any remastered games touch the sound or simply the textures. Or include a texture cache for ME1 to help with texture pop. Doesn't change anything about the game, and it's not that difficult to do. Simply have to re-cook the game with the SDK and set the option for it.
Anything else would be a reimagining of the game and not a remaster.

Edit: almost forgot, the game should be able to remember if Shepard and Liara were friends or not (because that auto friend zone BS was so freaking annoying).

Make us able to save Shepard's clone I would’ve been cool with the make-Brooks-say-something-stupid thing that can possibly get the clone to turn against her. Can’t think of how that line would go off the top of my head, but it might be to the effect of her using the clone for her own ends. In the end, not even the facsimile of Shepard does what others want.

I think the game should have simply locked you in at her first serious dialogue aboard the Normandy. It already gives you the option of continuing the relationship or calling it off.

I switched my Class in 2 because of that edit to add i also think being able to have intractable furniture like tes would help let me run missions solo or just one party member

I'd change a couple of ME2 mechanics.
First, I'd change triggering of the Reaper IFF mission. As it stance, this is the only part of the game where passing time has no consequences whatever, and I'd channge this to be like the rest of the game. Either triggering the mission outright following the Collector Ship, or some sort of event happens if time passes between those missions.
Second, I'm not really happy with the Hold the Line segment of the SM. The defense scores don't make very much sense, and I'd randomize who gets killed if anyone does. I'd also change the test from an average to total line strength. As it stands your squad performs better if you never recruit Tali, for instance. That's just wrong.

See, now, I love the Citadel DLC. You're only semi-correct about it's impact. You get war assets from doing the DLC. Mainly, though, it's a lot of fun. The end of it has Shepard saying it'll probably be the last party they ever have. I think letting them have this is the perfect send-off for what realistically was certain death.
There's also that one scene between Joker and Shepard where he it's said that Shepard is under more stress than Elysium/Torfan/Akuze. That means the posh cabin wasn't cutting it. Shepard needed some real downtime to recover. That was kind of the point. Or we could have a Shepard so unfocused and not able to think straight that he will fail anyway.
Sure, the gang war was "pointless" if Shepard initiated it but that wasn't the case. Shepard's identity was being stolen, which could have locked him out of the Normandy or to have access to any of his resources. In that sense, it's not at all pointless.

For me, I'd skip Tali and Garrus entirely, leaving Shepard even more isolated. That said, when watching video at Cronos Station, it's clear TIM wanted them there to make Shepard feel more comfortable. Still, I think they fill the same role.

Remember Garrus does not have to be recruited in ME1. ME2 comes around, Shepard barely remembers him. I don't have anything against Garrus or Tali. Zaeed and Kasumi fill their roles perfectly in ME2 and I feel like we're getting duplication. They serve the same roles. An all-new cast works best, particularly since A/K will completely ignore the fact that Garrus is present on Horizon. An alien working with Cerberus should make it clear to A/K that Shepard isn't fully on board with them.

If we're going there, how about chasing across the galaxy for every minor problem everyone has? The whole game is made up of Shepard doing pointless missions for people they don't even know. The Citadel DLC is that on a larger scale but, yes, made for the fans to enjoy. In fact, it epitomizes that this is the final end for Shepard. Hence, yet one more reason that ME3 was meant to end Shepard's trilogy.
Remember when Shepard was chasing across the galaxy to stop Saren and the Reaper invasion? Hell, let's just stop by Pinnacle Station for some shooting matches and win an apartment! Yes, that was an ME1 DLC. Just accept that BioWare does this sort of thing. If you let it distract you from the game then there are countless other things in the game that make absolutely zero sense in the context of the mission.
