Okay, so for a quick test, I went to .. a test site .. and using a ProBoards default theme, with ProBoards default smilies, and absolutely no plugins installed at all....
and it does the same thing!!
So it's definitely a ProBoards problem... I shall report it as a bug.

Could always change the text for the emoji so that it doesn't have the < Yes, I thought about doing that but then people who actually type things out might be annoyed. So, it's a possible solution if ProBoards doesn't have some kind of answer. Additionally, making a quick edit when switching from Preview to BBCode will fix it from changing back.
