In response to the OP, my least favourite / least played Turians are probably the Havoc Soldier and the Cabal Vanguard.
I don't really like Havoc Strike (maybe that's my fault for playing like it's Biotic Charge, except it's not), so I usually end up just playing him like a gunner using Cryo Blast as a debuff and stims for extra damage.
The Cabal I like somewhat better, but not a fan of Poison Strike. The Blades are okay, I guess.
I'm a much bigger fan of the other 3 Turians.
Sentinel is probably my favourite. It's my go-to kit whenever I don't know what kit to play or when I just want to get warmed up. It's just such a classic. Overload for shields and Warp for armour, TEXTBOOK! Not to mention the mighty goodness of TECH ARMOUR!
The Ghost is awesome, I always play him with Saber or PPR. Jetpacking Turian FTW!
The soldier is just a master at arms. Any gun that is hard to manage becomes deadly in the hands of the mighty Turian soldier. Gotta love him.

#4: Fat Turian Soldier AKA I want to complete SMG mastery. I'm one of those crazy people that choose concussive shot over proxy mine, because it helps stopping banshees and phantoms without interfering with my Marksman cooldown. Same here i changed recently, it certainly help with phanthoms(main problem with my soldier)

Fat Turians are OP and need to self-nerfed for the co-op aspect of allowing your teammates to occasionally kill something, maybe.
Thus, how I play the Turian Family:
TSol - usually Phaeston. Marauders are jealous of my Phaeston.
TSent - this guy really wants to kill everything. With the Tempest he still does, but again gives the illusion of team play while he carries the lesser races (again)
TGI - believe it or not, CAR Incendiary. Or Striker with Cryo... Not a fat Turian, but must be controlled or [X][X][X]
Cabal - I am pretty boring with her, in that I just feel she should kill whatever she wants whenever. She gets the Wraith. Perhaps I have a crush on her.
Saboturian - because I am not great with homing nades, he gets a good gun.
Havoc - Pirahna, it just feels right, and I have not really discovered a scorewhore approach to his gameplay. This is definitely my fault.
Soz, love me all them Turians, but the Fat ones are stronger.

I really wanted to make fun of you guys for struggling with extraction. Then I thought Care Bears. Then I thought Goon Rush and Phantom spam. Then I thought, "Where the fuck is my Scorpion?" I was actually fine and would have extracted, but since we were just having fun I decided to go for the last minute heroics and try to rez Aragorn in the LZ. No Cyclonics + Phantoms and Dragoons = inert inert. I thank you for your sacrifice inert but you didn't have to do that for me! Sonashii died before we did so that's all that matters.
