Let's be honest. Every publisher and developer is looking at Square Enix and Final Fantasy VII right now, waiting to see the end result. If it proves a massive success, I wouldn't rule out seeing a lot of companies start overhauling old titles to cash in on nostalgia. That being said, it's a little too early for the trilogy. Give it another 5-10 years. Why all you would be getting is a remastered version. Graphical update maybe a few tweaks to bugs and assorted problems in game.

You're better off just using mods. Not only do you get graphical upgrades, but bug fixes and additional content. Mods are not possible on consoles. Yes they are. Skyrim and Fallout 4 have loads of mods on the Xbox One and PS4. However, that's because Bethesda are happy to support them. EA, not so much.

The fact is both those games are made by the same developer. The only developer that doesn't have it's but hole clenched so tightly you could turn coal into diamonds with it. So for all intents and purposes it doesn't exist if only 1 developer vaugly supports it. The games are better on PC anyway. And yet marketing to PC only would limit the market of people purchasing it. And since this isn't a stupid pissing contest between Sony and Microsoft BioWare and by extension EA would be less willing to do a graphical update of the game if they are only targeting a portion of the over all possible audience.

Unreal 3 looks just fine for me. I'd love to see HD textures (mods ftw!), native 21:9 monitor support (with proper HUD scaling) and maybe official controller support on PC (more for my friends than me, I'm kb + m). But Frostbyte? Nah.

I'm actually one who likes to play games as they originally were, aside from 1080p60 updates if that wasn't there in the beginning. I don't even use texture mods for the trilogy.
I remember how I was super excited about Super Mario All Stars back in the days. Later on, when I want to play SMB1-3 again, I preferred the NES versions.
Realistically, it's never going to happen. Moving to a completely new engine is a huge undertaking, maybe one of the reasons for ME:A's technical issues, and they'd have to build the MET from scratch again. A remaster in an older version of UE could in principle be worth the effort, but that would still look dated today, so that's not going to happen either. I'll eat my hat if there will ever be any remaster of the MET.

Would anyone else like to see the ME trilogy redone in the latest engine, keeping the original combat and RPG style (of either 1 or 3). I would love to replay Shepard's story in a shiny new engine. It would be nice, if not just to make me want to take my time in ME 1 and not rush through it. The uncharted planet environments are just so bland and the gameplay sucks. Story however is top notch. ME 2ans 3?woudnt need as much touching up but a remaster wouldn't be feasible unless it was like what they did with Halo and Halo 2 which was re design it from the ground up plus more. It just wouldn't be financially sound at this time. Why not? Anything's possible. They just need to get their shit together before they make that step.

I would pay full price ($60+) for an ME trilogy in Unreal or Frostbite, with a consistent battle/ability/crafting mechanics as ME3.
