Just find it funny some people are seriously wondering and discussing the political ramifacations of this choice when...
"Interim Ambassador"
Bioware couldn't make it anymore clearer it's a fluffy choice not intended to have any real consequences but tacked it onto the epilogue just for the sake of having it there as plot device.
i'll be very surprised if it's not completely retconned or fluffed like the Udina/Anderson choice.

I am on my second playthrough, and heard that the Moshae gets annoyed if you don't pick her. Interestingly, she still got annoyed when I did pick her as the ambassador because she's not a politician...
I doubt it will amount to much, like you said. It may be like the science vs military outpost choice on Eos, where it's more of a symbolic choice (what the Initiative stands for) than any actual consequential one.

Since its temporary it will not have any consequences. I still feel Raeka is the right choice, might as well get the pathfinders into the leadership since they have to solve everything anyways. Finally nexus's main problems lie in not having clear leadership.

Annoyed if not picked, exasperated if picked, I considered her exasperation about right, her own people already place her on a pedestal, a position she is not comfortable with, she considers the term Moshae to be silly.

They did not tack it on only as a plot device, it was on purpose to prey on people's sense of nostalgia. This is what I don't get: OT was littered with inconsequential decisions and they chose not to learn from that. Udina or Anderson as ambassador? Doesn't matter. Destroy or keep the greybox? Doesn't matter. Thats OK, hindsight is 20/20 and at the time maybe thought those choices would be cool to have. But its been 5 years since the OT, and they still can't help themselves, they introduced an ambassador choice. He is an ambassador to the Nexus to represent the Nexus (whatever that means, horrible writing and only reinforces that its a plot device).
So why include it? For the same reason there is a giant remnant worm on Elaadan, some dialog about Okeer, an old Krogan trying to improve the lot of his people, a turian with the name Kandros, and finally the same reason Alec Ryder's big secret is the reaper invasion of the MW. They wanted to cash in on the nostalgia people had of the OT.

Udina vs Anderson had only a small impact and only if you sacrificed the Council. If you did, and you chose Udina, the new Council would not reinstate your Spectre status. If it's Anderson, and you sacrificed the Council, he will reinstate you even though the rest of the Council still won't meet with you. So there was a consequence, just not a big one.
As for Alec's big secret, wasn't it that Ellen was still alive?
