We have an air cooker. It's nice, but the reality of using it instead of a fryer is that the food is cooked, but not as tasty as it would be if it were grilled or fried. It's nice, but doesn't live up to the hype.

Thanksgiving leftovers pork loin tacos. Because I couldn't find a small turkey this year. I usually use tilapia with this, but have also used chicken breast and pork whenever I have them. Just needs spiced meat, spiced corn (fresh or frozen) and the avocado spread listed below. You could substitute the meat for beans, tofu or mushrooms, but I don't cook vegetarian stuff often enough to say which would be best. MightnotbeguacamolebutIdon'tcare spread Two avocados Large squirt (probably two tablespoons) of lemon or lime juice. I use lemon. A few drops of habanero sauce. Add more or less to taste. 1 tsp each of salt, black pepper, garlic powder and old bay seasoning. I eyeball it so you may want to adjust them to your liking. Add everything to a bowl, squish the avocados, then mix with a small whisk or fork. Or stick it in a food processor and pulse until it isn't chunky. Let it sit for an hour at least. I've added this to tacos, burgers, eggs, chips and probably a few other things I've forgotten about. Edit: The burger, for those curious, has the spread on both toasted buns, with the patty, some bacon and a fried or over easy egg on top. Very messy. Very delicious. I'll add a picture if I find one on my phone.

I used to have a recipe for a great English cherry pound cake, but it got lost somehow. No matter, I'm an excellent cook, so I can easily conjure up a new recipe, right? Right.. I usually approach cooking like an experiment: 1. develop a theory -> use an excisting pound cake recipe and add cheries. Should work. 2. document everything -> if the cake succeeds, I have to be able to do it again. 3. make a prototype -> it's better to bake a smaller version first. 4. learn from your mistakes and make corrections as needed So I baked the first cake: Looked and tasted good, but nowhere near done. The cheap canned cherries from the local grocery worked fine though. Time for the real deal: A full-sized cake with way too much cherries. 1.5 hours later and voilà! One very good looking cake, even if i say so myself. Now the icing. I know this is a deal-breaker for some, but I really like chocolate glazing on a cherry cake. Problem is, I've never been any good at using glazings. So I prepare the glazing in a saucepan and pour it over, and damn it! It doesn't work like expected, it looks like brown goo! It's all lumpy and gross! The cake looks like it crawled out of a bog now. No pictures, you'll just have to imagine a brown unpleasant looking.. thing. An expletive comes to mind. I'm sure it tastes delicious though, will let you know.

Screw the glazing, just leave it away. I appreciate the sentiment, but where's the fun in that? The cake was dry, apparently I baked it for too long this time. And the glazing was too heavy (I used baking chocolate and cream), I'll try chocolate and butter next time. Oh well, lessons learned.

Youngest came home with a gallon of Orange Chicken sauce yesterday. Apparently something got cut from the menu. So far, we've come up with the obvious chicken, maybe ham, and possibly glazing the corned beef with it. What the hell else are we going to do with that much orange sauce? Any suggestions welcome.
As for freezable breakfast, I usually make egg bake with a layer of tater tots on the bottom of a 9x13 pan coated with baking spray. Mix a dozen eggs mixed with a little milk, diced meat, shredded cheese, and whatever veggies and spices sound good with it. Bake it for 45 minutes to an hour at 350, tipping it to get the uncooked egg to the edges along the way. Chop it into squares, eat what you want and freeze the rest. It reheats well and you can make a thousand variations based around what meat and cheese you have on hand. Ham and Cheddar? Chorizo and Havarti? Chicken and Swiss? Go for it! Just make sure everything has a good coating of egg before you pop it in the oven.

So tomorrow is Australia Day, Boneless Leg of Lamb Rolled with Spinach, Feta, Bacon and Garlic and roasted in the oven and finished on the BBQ, DELICIOUS nothing says Australia Day like Roast lamb.

Well when I was a lad Mint Jelly or sauce went on Roast Lamb all the time but it is quite rare now I think because people marinate the lamb a lot now. I was never much of a fan of Mint in anything, we will have a choice of how it comes (the stuffing will provide a lot of flavour) or maybe with some Lemon juice. If I had some plain Yoghurt I'd make Tzatziki or just a Garlic, Olive Oil, Lemon and Yoghurt dressing. Before pictures, due to go in the oven for late lunch in about 30 minutes it's sitting on a bed of Rosemary from the garden and Garlic Cloves slightly crushed.

I love lamb with a good mint sauce. Had some here in Victoria (Canada) a long while ago. Instead of the more typical mint sauces I've had most places this one was quite different. It was a bit spicier, but not like jalapeno spicy, more peppery. The sauce also wasn't very thick, more of an au jus. Very complex and sooo good with a little bone-in shank.
One of those meals I'll always remember but never duplicate.
Luckily my grama likes lamb so cooks with it somewhat consistently. We're also the only two people in the family (arguably the only two people I know) that love anchovies on pizza.

Lamb's very popular in Australia and the country literally prospered early on "off the sheeps back" due to exports. I think I just got minted out early on in life, I don't dislike it and have a friend who always serves mint sauce with his lamb roasts so I have it then but it is just not a preference for me. I am much more a fan of gravy myself or a good Red Wine jus myself. Food memories haunt me sometimes and there are quite a few things I have tried to recreate that I just cannot get right. I don't do seafood at all and Anchovies are at the bottom of my eating list.

So done, eaten and very much enjoyed with a salad of diced Roasted Vegetables and Mixed Greens in an Olive Oil, Balsamic and Garlic Dressing plus a couple of glasses of Chardonnay to wash it down. All under a sunny blue sky - Temp 28c

We got a three in one oven, Microwave, Air Fryer and conventional oven for the benchtop to replace our dead Microwave. Was a bit expensive but has become really useful mainly when i need to oven cook two things at a different temperature at the same time. The Air Fryer is over rated I think.
