It all started with a jar of organic Thai red curry sauce that turned out to be hotter than Hades. And I say that as someone who likes a little heat in their food. So, not wanting to waste this jar of explosive lava-spawn, I came up with a simple casserole recipe that even my significant other gave a thumbs up to.
The jar of red Thai curry contained about 2 cups of sauce.
Into it, I mixed 1 lb of diced deli-roasted chicken. (if you want to increase the amount of chicken and decrease the amount of rice to make it more of a meat dish, that's fine. But I do recommend against leaving out the butter. It does good things to the curry.)
Added 2 cups of cooked red kidney beans. (Completely drain any liquid off the beans before using.)
Then, I stirred in enough cooked brown rice so that the sauce lightly coated everything.
Finally, I added 2 to 4 tablespoons of melted butter. This part is important; because butter appears to be the magic ingredient that makes the heat in the curry manageable and allows the other flavors in the curry sauce to come through. Heat this mixture thoroughly in a casserole dish and serve.
If I do this again, I might add some sauteed onions and other vegetables, and maybe some slivered almonds.

I recently got myself a pizza stone. I had to experiment a few times before I got the pizza right, but here's one of my favorite variants:
For the bottom (prepare in the usual way): *wheat flour (300g, light) *warm water (150ml, optimum may vary a little depending on the flour, but a little water can make a big difference so be careful) *olive oil (6 tablespoons, may vary a little) *dry yeast (one bag of a few grams, nominal capacity 500g of wheat flour) *a pinch of salt *a pinch of sugar
For the toppings (spread on pizza in this sequence): *canned tomato sauce for pizza (200-250g, I use canned sauce, my own attempts to make it haven't been as good so far) *red paprika, cut into small squares (about 1/2, may vary as preferred, but see below) *pickled red jalapenos (they come pre-cut in a jar where I live, amount as preferred, I don't weigh them but it should be about 50g) *garlic (crushed, 5-15 cloves as preferred, I use around 12, which is rather a lot) *Emmental cheese, grated (100-200g as preferred) *Oregano (amount as preferred, about 1-2 tablespoons I guess) *olive oil (about 5-7 tablespoons, may vary)
Baking: Preheat your oven at the highest possible setting (our ovens don't go higher than 300°C, 250+ works in any case) and heat up the pizza stone in it for about 15 minutes. Then put the prepared pizza on it and leave it in the oven for about 6-12 minutes depending on temperature, how much topping is on the pizza and how crispy you want it. As a rule, a higher temperature and a shorter time is better. You'll have to experiment with the time, I don't know your ovens.
This recipe requires a pizza stone large enough that it just fits into a standard 60cm oven. I have a rectangular one so I can vary the size depending on dough consistency.
Easy-to-make mistakes: *Too much paprika, tomato sauce or jalapenos. Results in a mushy pizza. Some people like it, I hate it. *Too little time reserved for heating the stone. The pizza must be put in the oven immediately after it's ready. If the stone isn't hot enough at that point, again, the pizza will get mushy. *Having made one of the abovementioned mistakes, leaving the pizza in the oven for longer. This results in a bottom that's too dry, possibly even burned, while most likely not solving the original problem. *Not enough olive oil on the pizza. The oil is what combines the ingredients' taste, with a little contribution from the cheese. It doesn't taste like real pizza if you use too little.

Been getting into using my girlfriend's slow cooker a lot lately. I do most of the cooking.
Made a lovely turkey chili, beef stew, and weird broccoli/hashbrown egg fritata amalgamation that actually worked out despite being from odds and ends and not following anything at all.
Borrowing from the state of my avatar I do tend to "wing it" more in the kitchen than follow recipes, how bout you guys?

Delicious lamb pie thing
Filling 1 tablespoon unsalted butter 1 clove garlic, chopped 1 1/2 cups mirepiox (carrot, onion and celery) 1/4 cup all-purpose flour 1 can cream of chicken soup 1 cup milk 1 tablespoon italian seasoning 1 pound ground lamb (or beef) Salt and pepper to taste
Biscuit topping 2 cups all-purpose flour 1 teaspoon baking powder 1 teaspoon sugar 1/2 teaspoon salt 1/4 teaspoon pepper 4 tablespoons melted butter 1 cup milk
Pre-heat oven to 400. To make the biscuit topping, add flour, baking powder, sugar, salt and pepper to a large bowl and mix. Add melted butter and milk and mix until dough forms. Either divide dough into six balls and flatten them, or roll it into a single sheet that can cover your dish. I prefer the former.
To make the filling, melt butter in a large skillet over medium high heat. Add ground meat, garlic and mirepoix. Cook, stirring occasionally, until tender, about 3-4 minutes. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in chicken soup, milk and italian seasoning. Whisk constantly, until slightly thickened, about 1-2 minutes. Season with salt and pepper, to taste.
Add filling to a prepared baking dish and cover with the biscuit topping. Cook for 20-30 minutes. Let cool 5 for minutes before serving.

Always start and end your cooking with a clean kitchen, even if you're only cooking for yourself. Everyone deserves a clean kitchen. It's worth the effort to pamper yourself.

It’s easily my new favorite gizmo. Vacuum sealed up some tenderloin with fresh herbs and butter and set it to 129 at about 1 hr and a half and it came out perfect. This thing could cook a roast.

Because of the combination of growing a lot of exotic chili, paprika, herbs potatoes and tomatoes in my own garden, the fact that I cannot deal too well with fatty foods and my dislike for ready meals and fast foods I like to cook Mexican/South American/ Mediterranean-ish dishes.
This is one of my favorite creations:
Fresh cut orange Habaneros Fresh cut yellow Jalapenos Fresh cut Trinidad scorpion 1 green or yellow paprika Some Basil leaves Some laurel leaves Cooked and cut potatoes 1 can of lentils (washed, without the can water - very important) 1 Zucchini cut into small pieces Minced meat (mixed, pork and beef) Tomatoes mashed into soup Some water to decrease the viscosity of the tomato soup White mushrooms cut into large slices. 1 scoop of cream
Cook it all, throw it together. Done.
Makes one hell of a tasty, healthy meal that is relatively easy to digest but rich on calories which makes it great as dinner meal for hot summer days. You can experiment a lot with different combination of chili's to make it extra tasty. For variation you can swap the potatoes with whole-grain noodles. ( I recommend elbow macaroni, for me they work best). And don't be too careful with the chili, this meal is best served hot, as in super spicy hot. The lentils and potatoes absorb a lot of the heat.

Do not be afraid to buy cheaper cuts of meat and slow cook it. Get the slow cooker going toss in your cheaper cut of meat, add some salza, then near the end add either rice or pasta. I experiment a lot when cooking, half the time it is a triumph half the time it sucks. Here is a bizarre spicey sauce that is pretty good but VERY strong and will over power anything if you add too much. pataks lime pickle

In modern times, it has been a source of occasional botulism poisoning because of some having taken preparation shortcuts using glass and plastic containers that don't allow for air circulation. It is truly a stone age delicacy because originally its preparation involved storing the meat in a grass-lined hole for an extended period of time. The CDC (Centers for Disease Control and Prevention) has a whole page of food safety advice directed specifically at traditional Alaska Native foods. The only traditional Alaska Native food I've ever tried other than smoked salmon is Muktuk, which is boiled whale meat. No disrespect intended, but it's just not my preference. The moose, caribou, and bear I've eaten have always been prepared using modern cooking methods and recipes. Same with the seafood too, except for some traditionally prepared smoked salmon.

Tips for cooking for yourself;
- Brown food tastes better (Mylar effect)
- When sauteing/searing be sure to utilize the Fond (the brown bits in the pan), this is what all classic espagnole sauces are about
- DO NOT overcook seafood/beef/lamb
- DO NOT undercook chicken (use a thermometer 170 degrees farenheit)
- Don't be afraid to adjust a recipe (within reason)
- A little garlic goes a LONG way
- Use dried herbs earlier, fresh herbs at the last second
- Be careful, keep your knife sharp & have the oven waiting for you, rather than you waiting for it to heat up
- Flavors should be BALANCED (Umame)
- Vegetables are incredibly versatile, play around
- Have fun!

Also, any seed-spices or heartier herbs (rosemary, thyme) can be lightly toasted in a pan over medium heat for a minute or less. This will superheat the oils inside & bloom the flavor. It's most effective right before adding to a dish, as the oils will turn rancid slightly quicker once bloomed
