Some more general cooking tips:
* When handling eggs make sure the egg shell never touches any of the parts you are using in your dish. Also watch your fingers. Hygiene is especially important with eggs, they often are not super clean on the outside and its possible to get nasty bacteria or germs into your food when you are not careful. Especially with low quality eggs there is the looming danger of salmonella infection through food contamination with egg shells. (As far as I know in order to reach a high enough temperature to kill salmonella and neutralize their toxins you have to cook your food until its a black brick, so simply cooking the food is not a solution)
* When cooking fish remove the fish bone when the fish is cooked, never try to remove it in uncooked fish. When the fish is cooked and soft you'll have a much easier time removing all the bone.
* When cooking noodles put some cooking oil into the boiling water, that way the noodles will not produce foam and spill over onto the oven.
* When preparing quality organic potatoes you can leave the peel on them, just remove the dirt and clean them carefully. Potatoes cooked with their peel still on taste significantly better and the peel helps to preserve flavors and important vitamins and minerals. But only do that on high quality potatoes.
* Use fresh chili to spice your meals, chili kills up to 70% of the bacteria and harmful germs that live in the food you eat. Its no coincidence that chili is so popular in the hotter countries where such germs are thriving especially well.
* When you are grilling a steak never stab it with a fork or a knife, it will leak water and become dry and hard when its cooked. Use a spatula.

However, as a culinary professional I'm afraid I must interject on a couple: - Eggs only need to be cooked to about 120 degrees farenheit, as long as they are good quality. No need to immolate your food (Quality beef only to about 110 degrees, pork to 125, chicken to 170, and white fish to 140. Most Salmon & Ahi/Yellowtail can be seared rare) - I'm afraid chilis/peppers DO NOT kill any bacteria whatsoever. (Some of my worst food poisoning has been from spicy foods) They are only hot because of an chemical called Capsaicin, which is what makes spicy foods "burn" the tongue and gives the euphoric sensation immediately after the heat. They DO boost the immune system as well as help to regulate glucose levels, so they do have health benefits. - Red meat is muscle tissue (usually), and therefore contains a large amount of blood. This is what will "leak" if the steak/chop is poked or otherwise fucked with before it has "rested". To rest, simply leave the piece of meat alone AWAY from the heat to cool for 50% of the cooking time. This will allow the blood to "settle", and be evenly distributed throughout the meat, allowing for easy slicing and juicy, delicious eating. (Any steak that is dry or hard has simply been overcooked, see above ^)

I said if you wanted to kill salmonella and their toxins in the food with heat you would theoretically have to basically incinerate your food, which I do not endorse because thats kind of unpractical. That's why I said you have to be careful when handling eggs. Low quality eggs usually do not contain salmonella on their insides, its the outer egg shell that is contaminated with that stuff (chicken poo). Read my post again. What makes a true professional is not getting blinded by your own arrogance and keep an open mind to become even better and learn even more. I'm a professional weight lifter and I have been wrong about lifting things a couple of times, as rookies pointed out. I accepted I was wrong and learned from it, to keep improving, I did not put other people down for correcting me nor did I shrug off their information as rookie crap because of my huge ego. Just because you have been doing something for a very long time on a high level does not mean you are unfailable, thats a lesson every professional learns eventually.

I have a bone to pick with Chefs....yes I am looking at You Budgee! Most of them are meat snobs. I watch some of these reality cooking shows and the worst thing in the world that will get you drummed out of cooking is 'over cooking' meat. I don't like rare meat. I can 'tolerated' medium rare (aka pink inside). I like most meat well done to medium well done which is usually met with much derision. I also think a LOT of other people feel the same way. If you are a good cook, you should be able to cook a good meat dish that is well done without sneering and calling it shoe leather and know that you are cooking for the wants of your customer. There, I feel much better now.

Babies & elderly should not eat egg-based sauces... too risky I eat hollandaise/bearnaise/foyat/zabayon at LEAST 2 times in the average week & I rarely ever get food poisoning (last time over a year ago)
