I would love to have a wellington at xmas but all the veggie ones seem to have mushrooms in and even the thought of one makes me gag. Instead of a nut roast dinner we're doing a mini buffet this year. That was I can put food out and leave everyone to it.

I think another version I may prefer is Punjabi which is nearly gravy less- more like a paste that gently coats the chickpeas. I have no access to brown chickpeas, just been working with the regular ones I get here in america which aren't quite beige.

I have no access to brown chickpeas, just been working with the regular ones I get here in america which aren't quite beige. be glad brown ones have a different taste and they smell rancid, although you can probably buy them in trays of 24 cans from amazon (kala chana) in the US since its a yank company that imports them to the UK.... and yes that does mean I donated 22 cans to the local welfare group (its food after all and if your desperate you'll eat anything) ive found with Asian/indian dishes its actually pretty important to use some sort of oil when the recipe calls for it, and whilst I often make vegy dishes becasue there cheaper I am at heart a meat eater, I just prefer using olive oil since its the only one that doesnt get palm rape seed or other nasty shit added to it (so long as your watching the label closely for your chosen brand) most every other type of oil does seem to have been buggered about with, even half the coconut oil on sale has been (I mean wtf why) and actually coconut is another good option for replacing ghee with since its got the right consistency and is still meat free anyhow its mostly about softening as you brown things like the onions off (and yeah using normal chick peas is generally fine, I still dont like them much mind you, my other half loves them...) and if you dont then the flavours dont release properly (and of course the spices remain raw which spoils the dish anyway) which is likely why your dish(es) taste off when made at home.. I can understand going "fat free" from a defective health perspective but I can tell you from a functioning and logical one that its pointless, your body needs everything in moderation and some things in larger amounts, and cutting out any one thing is bad for your body, changing your diet to contain less of something so from cooked breakfast to a bowl of museli (check ingredients though since most of the so called healthy stuff is actually twice as bad for you as a decent fry up) there are a myriad of problems with the health industry's "advice" and most of it just leads to further problems (because nothing helps the medical industrial complex meet profit targets like repeat customers that your own advice made ill and you can actually cure this thing thats wrong with them through supplements they dont really need to replace the thing you made them give up especially when doing so means you sell them 50 cents worth of animal fat miss described as cellulose for 50 bucks) and yes I might be a tad cynical about this stuff but then I am also aware of 3 things that are widely available worldwide, can be mass produced for a few bucks a hectare can be harvested for not much more that can between them cure a large majority of ailments and are highly restricted in terms of who is allowed access to them and in what forms that access is permitted…. the fastest way to loose cholesterol build up is through certain plants, the best one is also illegal to grow without a licence and cant be used as food stuffs in most of the world.... kind of thing.... never mind that a certain chemicals company that produces most of the seed stock thats used world wide also produces the bulk of so called cures produced in the last 40 years (about hte same time its bene frankensteining seed stocks on such a wide scale) through its subsidiary companies, which just happen to co-incide with its partnership conglomerate (that uses most of the contaminated junk they call ingredients, adds in some other chemicals and churns it out as food under various household names, and is the largest single foodstuffs producer in the world) and between them they own or fund the majority of medical research and advisory groups or companies, (and yes they really are that insidious and wide spread) to the point that in general more people are sick with something (population density) than ever before (including during global pandemics like the Spanish flue or sars etc) recorded, and its all down to what they poison us with claiming it to be food or healthy advice... want to eat healthy, then yove got a lot of work on your hands ( fortunately since my wife is gluten intolerant and these fuckers have started adding modified wheat to everything I have become quite good at finding only plain ingredients nad making shit myself so were almost clear of all the toxins the average mind controlled people on the street are pumped full of every day (and yes the metabolised effects of several of these things is similar to scopolamine except it only makes you susceptible to receiving subliminal messaging from things like the TV, fortunately you can undo this and free your brain by switching of the goggle box and no longer consuming their trash!) yes I know sounds a bit crazy (almost like alex jones) but ask yourself why is so many people (by population density) are suddenly suffering mental illness, why are things so polarised and why is it this fanaticism isnt seen in the 3rd world (the only place they dont eat the shit these congolomerates are pumping out)…..

nanotmI'm not fat Free. I'm refined oil and refined sugar free- at home. If I'm at a restaurant, it would be impossible to be that way, so I do let loose a couple times a month and go out. And I'm optimistic that either through trial and error or just my taste buds changing, that I will achieve oil free Indian Dishes at home. I already have Tomato Sambar nailed down and a found a decent Rajmah. And I feel like I'm onto something with this Punjabi style Chana as well. Re Health: my health has significantly improved with this method of eating and I reject supplemental powders. Yes, ai am under supervision of a doctor, and My protein levels checked and normal the last 6 years. Regarding food conspiracies, being plant based I know how to read labels. Generally what I buy, though, can't be messed with. Except in extreme circumstances, an Orange is an Orange and dried beans in a bag are just that. So the ingredients list of my food is a single one.

I still think a simple hummus recipe is the best thing to do with chickpeas. It's a hard food to hate because there are so many different variations to make and ways to season it.

Pasta dough 1 cup sifted flour 1/4 teaspoon salt 1 beaten egg 2 tablespoons water 1 tablespoon olive oil (optional 1/4 teaspoon pepper and/or dried herbs)
Mix dry ingredients, make an indentation, then pour in the wet ingredients and knead for about eight minutes. Add a little more olive oil if it's too dry, a little more flour if it's too sticky. Roll the dough into thin sheets. At this point, you can cut it into lasagna sheets, noodles, make ravioli or perogies, etc... A pasta maker helps a lot and isn't expensive, but you can do everything with a roller and sharp knife.
Convenient pasta dish for your homemade pasta. (If you make this as a side dish, leave out the chicken)
Pasta 1/4 teaspoon salt 1/2 teaspoon pepper 1 tablespoon italian seasoning Diced chicken breast, salted and peppered Broccoli florets chopped 2 cups heavy cream 1 tablespoon butter 1 clove garlic, chopped 1/2 cup grated parmesan cheese
Bring a pot of salted water to a boil. Cook the pasta until it's done and reserve 1/2 cup of the water before draining. Add the butter, garlic and chicken to a pan on medium high heat. Cook until it's started to brown. Add the cream, broccoli, salt, pepper and italian seasoning. Bring to a boil, then reduce the heat to medium low. Let it simmer for about five minutes until it's reduced by a third. Stir in the parmesan. Add the pasta and reserved water, stir and top with more parmesan.

Okay I followed an internet tip re turkey cooking and tried it out and am totally sold. This would work with chicken as well.
Marinade the bird in brine for about 24 hours (add spices to brine as per your tastes.
It really made a difference in the the bird. Very moist very tastey,very good..

Marinade the bird in brine for about 24 hours (add spices to brine as per your tastes. It really made a difference in the the bird. Very moist very tastey,very good.. Brining makes a huge difference. You'd think it would make the bird too salty, but that isn't the case.
