Okay.....comments. #1, just like all of my friends and relatives that extol the virtues of kale almost every single one says 'make kale chips!' As in take the kale and do as much as you can via seasoning and baking and crunching to make it as far away from kale as you can get. #2, I have this thing, this great prejudice against gourmet burgers. Chefs and gourmets need to stay the hell away from burgers, burgers are not yours, you can have steaks and roasts and lobster and what have you. Stay the hell away from burgers and hot dogs! #3 In the video point #2 was perfectly displayed. He makes his burger and then side slices it. I say to myself, well at least FINALLY we have a chef that does not grossly under cook a burger. Having seen a number of gourmets make burgers they all think thy should be like a rare steak. F*** O**! Burgers need to be well cooked not raw. And of course what does the chef say in the video...oh it is over cooked! Proving 100% that chefs and gourmets need to stay the hell away from burgers.

I made Chilli a couple of weeks ago but kept forgetting to post, I took what I thought were the best parts of 3 or 4 different recipes and unfortunately had to dumb down the actual chilli content. otherwise, 3 of the 4 people would not have eaten their dinner. It was a success as everyone enjoyed and we ate it like a deconstructed Nachos in that there was Guacamole, Salsa, Sour Cream, Cheese and the Chilli and people just plated what they wanted and ate it with Corn Chips. Contained: • 1 tablespoon olive oil • 1 medium yellow onion -diced • Red Capsicum & Green Capsicum • 1 pound 90% lean ground beef • 2 Tablespoons of Tomato Paste • 2 1/2 tablespoons chili powder • 2 tablespoons ground cumin • 2 Tablespoons Chipotle in Adobo Sauce • 2 tablespoons granulated sugar • 2 tablespoons tomato paste • 1 tablespoon garlic powder • 1 1/2 teaspoons salt • 1/2 teaspoon ground black pepper • 1/4 teaspoon ground cayenne pepper* -optional • 1 1/2 cups beef broth • 1 (15 oz.) can petite diced tomatoes • 1 (16 oz.) can Mexebeans, drained and rinsed Anyway, here is a picture Last night for the first time I made Eggplant Parmigiana with my daughter from a Jamie Oliver recipe. It was really nice but instead of using fresh tomatoes to make a sauce we used a bottle of Passata and it was probably a bit rich. I also cut the Eggplant a bit too thin but the bonus was I got to eat those as they fell apart after cooking them in the oven. Forgot to take a picture but this one on the net looks very similar except ours had more cheese.

Cooked a new curry recipe last night, Beef, Spinach and Potato from a recipe I found on the net and made some modifications to. It tasted great but even after cooking it for 2 plus hours the meat was a bit tough, think it was the cut. When I make a curry I normally boil the meat for two hours before cooking it in the curry to make sure it is almost fall apart but decided to follow the recipe which said 1 1/2 hours which I thought would be enough but I extended it and it still was a bit chewy. Mmmm maybe because I got the meat out of the freezer and even though I let it defrost??? Anyway will try the recipe again as it tasted great. Again I forgot to take a picture, mine didn't look this good, less potato and more liquid.

Curry is one thing I never thought much about or liked when i was young but i just love it now. I had the good fortune as a teenager to have a good friend who was a Sikh and OMG his mum was an absolutely great cook. He also regularly took us a to different Indian Restaurants where they knew the owners, was great and I am a big fan of Kingfisher Beer.

I sure do, but it's a bit different: Ingredients for two adults: -about 300g/11oz of sliced flank steak -vegetable oil -black pepper -chili powder -1 tbsp of soy sauce -one small can of pineapple chunks -200g/7oz of tomatopurée Heat the oil and add steak. Stir-fry until almost done. Add a pinch of pepper. Add all of the purée and pineapple chunks with their juice. Stir well. Add a liberal amount of chili powder and the soy sauce. Stir. Let it come to a boil and you're done. Works best with rice, and you can replace the meat with vegetables if you like.

I thought I was the only one that put pineapple in chili at times. It never would have occurred to me, but I get why it works. It goes well if you have very spicy chili i find. A nice bit of sweet balance with the heat. Not quite as good with mild chili imo.

A good tip I did pick up with rice in particular but that also works with pasta/noodles is cooking them in chicken stock depending on what is you are eating them with. I also add garlic powder to rice when I am cooking it so the rice is not so bland.

I cook pastas with a boullion block instead of salt. Pretty much same method Dazk uses just doing it the easy way . Also adding a splash of olive oil gives the pasta a nice glow and works as a non stick agent. No need to rinse the pasta after cooking if you add some to the water.
