They were supposed to look like rabbits but turned out to be more like the monstrous mutated squirrels in Fallout worlds. xD If you love banana bread I highly recommend you try the recipe. Key is to use bananas that have ripened enough. I usually wait till the skin turns a little bit black. Somehow it adds in more moisture and flavor this way. Fresh blueberry definitely makes the texture better. xD Walnuts or pecans are good options too. Also tried chocolates but the outcome isn’t very impressive. I call my sandwich B.E.T. Lay a slice of cheese on the sandwich bread of your choice. Then add bacon (cooked a bit under your usually desired crispness), Over-easy or Over-medium egg(depends on how runny you like your egg), and sliced tomato. Sprinkle some salt, pepper and parsley. Cover them with another slice of bread. Bake in oven at 400F for 3~4 minutes then turn up to broil for 1 ~ 1.5 minutes till cheese melts and bread become a little brown. (I have an old oven so you may need shorter time. Just don’t overcook them and set off fire alarm like I have done for so many times xD). Serve while it’s still warm and crispy. If using croissant you can add in even more stuff, like spinach and avocado on top of cheese, bacon, egg and tomato. It’s going to be a big sandwich with enriched flavor. Maybe too much for breakfast but perfect for lunch.

GATHER YOUR INGREDIENTS Table salt 1 pound small red beans (about 2 cups), rinsed and picked over 4 slices bacon (about 4 ounces), chopped fine (see note) 1 medium onion, chopped fine (about 1 cup) 1 small green bell pepper, seeded and chopped fine (about 1/2 cup) 1 celery rib, chopped fine (about 1/2 cup) 3 medium garlic cloves, minced or pressed through garlic press (about 1 tablespoon) 1 teaspoon fresh thyme leaves 1 teaspoon sweet paprika (see note) 2 bay leaves ¼ teaspoon cayenne pepper Ground black pepper 3 cups low-sodium chicken broth 6 cups water 8 ounces andouille sausage, halved lengthwise and cut into 1/4-inch slices (see note) Basic White Rice 1 teaspoon red wine vinegar, plus extra for seasoning 3 scallions, white and green parts, sliced thin Hot sauce (optional)
BEFORE YOU BEGIN
If you are pressed for time you can “quick-brine” your beans. In step 1, combine the salt, water, and beans in a large Dutch oven and bring to a boil over high heat. Remove the pot from the heat, cover, and let stand 1 hour. Drain and rinse the beans and proceed with the recipe. If you can’t find andouille sausage, substitute kielbasa. Tasso can be difficult to find, but if you use it, omit the bacon and paprika in step 2 and cook 4 ounces finely chopped tasso in 2 teaspoons vegetable oil until lightly browned, 4 to 6 minutes, then proceed with the recipe. In order for the starch from the beans to thicken the cooking liquid, it is important to maintain a vigorous simmer in step 2. The beans can be cooled, covered tightly, and refrigerated for up to 2 days. To reheat, add enough water to the beans to thin them slightly. 1 INSTRUCTIONS

I think the beans should also go well with sweet rice. Definitely gonna try this sometime. I have plenty of red beans left from last winter that I don't know what to do with.

I made some more bread, lots of different grains in this one. Could we have the recipe please? Sure! Although, uhh I have to admit I didn't really measure the grains & such, I used about 200g mixed of barley & roasted barley (soaked in water), and another 100gr of steel cut oats (soaked). I'm pretty terribad at measuring things... each time, things come out different I've put the basic recipe for this bread here under the spoiler, without the added grains that I just kind did on a whim. Stuff you need: Roasting Pan Baking stone/pizza stone
1.5 tbsp or 9.5gr active dry yeast 1 tbsp or 12.5gr table/granulated sugar 1 tbsp or 17gr salt 2 cups or 475ml warm water (not over 110°F) 5 1/2 to 6 cups (650-720gr) All-Purpose Flour cornmeal or flour for dusting
some amount of boiling water
Instructions -------------- Get a bowl large enough for everything, but for now, just add the water, and dissolve the sugar into the water. Once it's in solution, pitch the yeast in, mix it up, and give it some time to activate or proof.
In another bowl or vessel or something, get your flour and whisk in the the salt.
Once the yeast looks like it's happy and alive, gradually add the dry flour/salt into the wet mixture, mixing throughly until the dough kind of pulls away from the side. If you need to add some more flour to keep it from being too sticky, go for it, but you don't want it to be too dry (hence always adding the dry to the wet).
Turn the dough blob out onto a floured surface to knead. Knead for like 5 minutes, adding only enough flour on the kneading surface to prevent it from sticking.
Let the dough rest for a bit, and scrape out the bowl, and coat it with a bit of olive oil. Knead the dough again for another 2-3 minutes, then plop it in the bowl and cover it up.
Let it rise in the bowl, covered, for 1-2 hours, or if it's doubled in bulk.
After the first rise, turn it out, and punch it down briefly to push some of the air out, then shape it. I did one big loaf, but you could divide it into two.
Let them sit for a bit, while you get your water boiling, and the oven set. I couldn't tell you how much you might need, but the idea here is to fill a shallow pan about 2-3cm/1in deep with the boiling water. So get the shallow pan and get your water boiling.
When that's happening, lightly slash the top of the loaf (or loaves) 3 or more times diagonally and brush them with cold water.
Plop the loaves onto a baking stone and turn the oven on, bake at ~400f/200c for 35-45 minutes or until the bread is kind of golden brown and sounds hollow when tapped.
I like to rotate them half way through, and I have a convection oven so I actually keep it closer to 375f/190c.
