Always make sure I vary them as much as possible, otherwise it feels like I'm playing the same character over & over again. I try to vary, often successful (see above), but sometimes I'm not successful and all but one of my characters look like crap, and then I do replay the one character whose face I liked over and over again. DA2 was a prime example. No character looked good until I installed some mods, and then I was so glad I had even one good face that I didn't ever play someone else again.

Even though I strive to make unique characters I find myself falling into the same traps. Eyes wide apart and not too high up on the face, not too big of a jaw, no 'surprised' looking eyebrows etc. It took me forever to finally give my female elf a big jaw in DAI, but it ended up balancing out her face in the end. Then there are the limitations of the character creator making many people's toons look alike. My tips would be to give them imperfections, noses a little too big, eyes a little small, then they feel more real and less like barbie dolls. Also go out of your comfort zone and choose that eye shape you're not sure of or the smaller lip shape. You never know how they'll animate and sometimes they can really work. I think I've managed to make some different looking Wardens, Shepards, Hawkes and Inquisitors....

Yes, yes, what a surprise! And yes, Zille Lavellan, and I have Queen Cousland and a Brosca (this two I don't have a screenshot, it was long ago, I try to find one).

It's just an icing on the cake – I love his romance, strory and his temper. I'm weird. (Fenris' and Bull not really my type, but I love their romances.)

No matter which romance you prefer you're never weird for chosing it. We all have our favourites for different reasons.

My characters are different from game to game, but within each game I have hardly any variation in my characters. Once I find my canon look, it is very difficult for me to deviate from that. I always try to change up the look for different playthroughs, but it just ends up feeling off, and I abandon the character.

Do you find you tend to remake the same characters? It depends. I can make pretty different characters: Mass Effect: Louise Shepard (modded hair):
May Shepard:
Maya Shepard:
Rhea Shepard:
Amir Shepard:
Cyrus Shepard:
Dragon Age: Lilaeya Lavellan:
Kiina Lavellan:
Maelyn Trevelyan:
Rowan "Red Rowan" Hawke (modded face, hair and clothing):
However, once I've come to really like a character, I tend to replay them several times to refine their playthroughs, rather than also replay other characters or make new ones. So I have several playthroughs of Cyrus Shepard, Maelyn Trevelyan and Rowan Hawke, but only one of the others, and most of my DA2 characters remained uncomplete since I didn't like how they looked. Also, there are some features where only one option fits, for instance you'll find my female ME characters tend to have the same basic mouth shape, and my male ME characters to have the same basic nose shape (the others all look like radioactive vegetables from space), eyebrows and similar deep-set eyes.
Some nice ladies there nicely done. Must admit I like your Hawke.

...What mods are you using? This is by far the best looking fem Hawke I've ever seen. The male and fem Hawkes I make always end up looking like a potato.

It's been a while, so I can't identify all the mods going into this specific face. However, here's a list of the face and hair mods I have installed:
It's two years old though. I haven't played DA2 since 2016.

I have a simple set of rules (this carries across all games I play).
Any Mage like character (so mage in DA and Biotic in ME etc) is female black hair/blue eyes, any ranged/scouty type (scout DA, sniper ME) is female blonde/green eyes and any hand to hand up close combaty type is male, brown hair/brown eyes. Everything else (race, age, face shape) is up for grabs.

I have to answer the question based on different games, because I create a canon player character, and then only ever play that particular character. But each of my player characters are as varied as possible, both in the character creation screen and in roleplaying and and other features such as gender, race, ethnicity, personality, sexual orientation, and so on.
My Warden, who is featured in my avatar, has pale skin, longer hair (though braided and tucked up, and blonde), green eyes, and more traditionally attractive feminine features (as much as a dwarf princess would have anyway). She is a saintly, lesbian, archer rogue with a fairly happy ending in romance. My Inquisitor also ended up a female dwarf, but she has darker skin, short hair (brown), orange eyes, and leans a little more to the androgynous in features. My latina dwarf is a humorous and charming, straight, two-handed warrior with some drama and tragedy in her romance. So, despite winding up with the same race and gender, I would claim that my character customization choices are varied.
