Nah, I like to change it up. Choosing different races and genders and hair colours helps. Only have some of my Wardens and Inquisitors handy, but here are some of my various characters. (Warning: many images below cut.)
However, I do have a problem with noses. I swear I only ever use a couple of the basic nose shapes - the others all look wrong to me for some reason.

My cannon characters are pretty much all the same person (both in terms of appearance and personality) and tend to choose dialogue and actions that I would in a situation, but other playthroughs make other choices and have wildly different appearances.

I definitely tend to have a 'look' for my characters. Sometimes it is on purpose and other times it's not. Once I create a face I like I don't want to mess with it too much.

Yeah I used to struggle a lot too at first and I found the more I play with it the uglier it ends up getting. So nowadays I just go with defaults and just tweak them a bit for example give them a different hairstyle and hair colour change eye colour and makeup like different colour eye shadow or lipstick from time to time when playing a female character. So generally mine are largely defaults with one or 2 minor changes. Generally I can get to where I want to go within about 20 minutes with my characters by doing that. I like playing around in th eCC's to see what's possibe but once I find the settings I like I do tend to stick to them. One thing I did like about MEA's CC was I did find I liked a lot of the female hairstyles. Especially the Ashley Williams type hair and the 2 ponytail styles as I do tend to use them a lot on my ladies

It doesn't come up much in DAI. I don't think I've repeated a race/gender combo yet, which keeps things under control.
Not sure about ME. I'll have to pull some saves.
My procedure is to start with a preset that looks something like what I'm aiming for, or one which looks interesting if I don't have a vision. My third Quizzy was actually a near-duplicate of Ser Ruth, FWIW. That was a weird judgement.
@ Gilli: your Kita looks almost identical to my second Warden, except that Kallia is a city elf and has redder hair.

Mine vary quite a bit. Sometimes there are similarities due to particular strengths/weaknesses of the CC. I'd love to have even more variety through body customization but the race options can at least sort of help with that.

Depends on the CC.
In ME Trilogy, all my Shepards look the same, only the hair color changes. It's because I really only like 1 nose and 1 eye shape, and they are what usually makes faces different. Plus, my Sheps always have similar personalities, so no need to change their looks.
In DA2 the situation is similar. Although I do actually change Hawke's looks over the course of a single game, they usually are quite similar to each other.
In DAO and DAI, my Wardens and Quizzies are very different, although I keep a few similar traits. So big eyes, relatively light skin, small-ish nose. But they do look and act quite different, so it's enough for me.

When I first started playing games with custom characters I'd try to make my characters as pretty as possible mostly because at the time I was very uncomfortable with my own appearance these days however I try to make my characters more varied and flawed and while they're still pretty (in my opinion) I do try to make them look more varied by giving them flaws and such ^^ for example, my main warden has facial scarring and freckles, as well as warpaint my Hawke has color matching hair and eyes (strawberry blond hair and amber/gold eyes), she also has very faint freckles for my Inquisitor I plan on giving her red hair and green eyes, maybe add some scars or tattoos as well, not sure yet I even have plans for my potential DA 4 protagonist, who I plan on making albino (provided the CC is as extended as in Inquisition )
character creation for me is both my favorite and least favorite part of games, alongside naming I have a hard time naming characters, so these days I just have a Word file where I jot down names for potential characters/projects xD

no never, unless i remake the same character, every new character of mine looks different and i spend quite a long time behind the character creator ro make the look i want for them, often well over an hour.

My character choices aren't very different, each game I play and I almost always play as a human. When I do try to get outside of my usual character looks or character nature, I have trouble finishing the game. I seem to like my well worn, often traveled path.

In DA:I & DA:O, I think I've tried every race/gender combo, so there's a lot of variety right there. And when I do create the same race/gender combo, I try to make them distinct in some way. Mostly so that I can easily tell one playthrough from the next. But if it's a CC I'm having a rough time creating a look I like (ME trilogy for example), and I can't be bothered to mod it... then they might stay closer to the defaults, or just similar aesthetics. But mods in general play a pretty big role (eg. Skyrim). If you think DA:I's CC is a time sink...

Not very, if I'm being honest. I only want to design characters that I personally find attractive, and that is VERY difficult with the character creators both in Dragon Age and Mass Effect. I especially suck at getting a face-shape that looks good while actually playing the game
Typically, I start with the best pre-set I can find, normally a square-jawed face, with reasonably symmetrical features, and then I change the hair (again, good options in BioWare games are limited, so it's usually always the same hair every time), skin and eye colour, and add a few small scars or tattoos to try and make them look like they've had a dangerous and exciting life prior to now (because I like to envision my characters as rogue-types who get in a lot of scraps and have had adventures before this).

I have a particular look for each race in DAI that I have a tendency to return to if I repeat the race, just changing hair/eye colour.
With DA2 I did tend to vary my Hawkes more because we could only play one race. So I changed the nose, forehead and mouth even if I kept the basic face structure the same. I deliberately made one of my female Hawkes a bit dowdy and plain looking to begin with but then she improved her hair style and make-up as she went up in the world. With my other Hawkes I changed their hair style with each Act and I am currently replaying with a Hawke who got a shave between the prologue and Act 1. I love the mirror for being able to do that.
With DAO I definitely changed my later Wardens as I hadn't been entirely happy with my first effort and of course there was no option to change things once the game was underway.

However, once I've come to really like a character, I tend to replay them several times to refine their playthroughs, rather than also replay other characters or make new ones. So I have several playthroughs of Cyrus Shepard, Maelyn Trevelyan and Rowan Hawke, but only one of the others, and most of my DA2 characters remained uncomplete since I didn't like how they looked. Also, there are some features where only one option fits, for instance you'll find my female ME characters tend to have the same basic mouth shape, and my male ME characters to have the same basic nose shape (the others all look like radioactive vegetables from space), eyebrows and similar deep-set eyes.
