I'm around 30 hours in so far and really enjoying the game. I've been using Assault Rifles most of the time and am going to always keep at least one AR equipped, although now that I've got access to the extra holster and reduced weapon weight perks, I'm trying to figure out which type of weapons to use to complement my Assault Rifle.
Can you guys recommend any specific weapon type (Shotgun, Sniper Rifle, etc.) which would benefit me based on the encounters I might come up against in the future? At the moment I've got 3 holsters, so I can use my AR and two other weapons, although I can't decide which. I've been filling the two extra holsters with Assault Rifles so that I've got three, in case I run out of ammo, although I've been feeling as though I may be better off using a different weapon type for each holster instead.
I was going to use a Sniper Rifle, although I read some weapon reviews online which stated that Sniper Rifles in this game don't really have much use as enemies are always quite close to you. From what I've seen so far, it seems to be true, although I'm still only on EOS so I'm not sure if that'll change later on in the game. Shotguns could be useful I guess, although even at close range I've been quite successful using my Assault Rifle, so I'm not sure whether to use a Shotgun or not. Then there's things like Grenade Launchers, etc, although having fought a Remnant Destroyer recently, I used all my ammo from my Falcon grenade launcher and it barely caused a scratch. I then swapped to my Assault Rifle and it seemed to do considerably more damage. Therefore, I'm not sure if/when grenade launchers become useful.
Any help would be appreciated, thank you.

It depends on your playstyle really. What kind of class or abilities do you mainly use?

It depends on your playstyle really. What kind of class or abilities do you mainly use? I'm mainly an all round soldier type with the Soldier profile. I've focused 100% into Combat abilities, and not invested a single point into Biotic or Tech.
My three main Combat Powers are Concussive Shot, Turbocharge and Omni Grenade. The only weapon type I've invested points into is Assault Rifle.

Hm, in that case maybe one sniper and one shotgun, letting you have a weapon best suited for each range of combat.

You don't have to fight close up. For many random mook encounters you can park the Nomad quite far away and pick them off with a sniper rifle. Some of your squaddies aren't super effective at that range, though.
If you're not using powers, then you probably won't need pistols and SMGs, so like Hanako said, an AR, a sniper and a shotgun will probably be the most versatile combination. Sniper rifles are also good for bosses that you don't want to get close to.

From my experience, either a sniper rifle or a pistol - or both, if you so fancy.
Sniper rifles for extended range (and by that I mean ranges where health bars aren't even visible - I've had sniper rifle kills to which I had no reaction from the remaining enemies, because I was so far away).
Pistols for when you need to backup your empty weapon. In ME this is not much of a concern, but in reality, switching to a sidearm IS faster than reloading - one of the things games like CoD DO get right. (My time to reload a rifle right now is somewhere between 3.5 and 4s, while my rifle-to-sidearm is just under 2s, all measured without a plate carrier, so on-base kit)
Unfortunately the reloads in the game are so fast that pistols largely lose their utility value as secondaries.
Still, I'd recommend an automatic pistol (like the N7 Eagle) or a PDW (like the Tempest) as a secondary. If you favor semi, you can even follow my footsteps with the M5 Phalanx.
Shotguns are largely useless due to their spread, unfortunately. Unless you play a Vanguard.

Get a Hornet with a vintage heat sink as your primary. It hits hard and is very accurate, and I found it more effective at all ranges than any AR I tried.
The only other weapon you'll need is a sniper rifle for those moments when you have to park your Nomad far away from the action to avoid it getting incinerated.

Hmm... I haven't found shotguns to be all that useful myself, Vanguards excepted. There aren't all that many encounters which are in confined enough spaces to make shotgun range easy to get into without exposing yourself to more fire than I care to take.

TR explains it well here: Shotguns are simply not battlefield weapons. At that range you're better off with a short gun. I'd explain why, but I'd need a camera. Me saying you can easily retract and one-hand a short gun while using your weak hand to keep them at a more acceptable distance will have to suffice. Also Dhan hardly fits the definition of a shotgun.
To add to that, they're only useful with Vanguards because of gamey mechanics. If we were to have Vanguards in real life, they would probably favor pistols and melee weapons, with assault rifles on their back plates, just in case. Simply because when you're that close, long guns are fucked.
Another fine video on that:

This is a game. Real life rules don't apply. It's not like I can get a pistol out and use my free hand to keep a Fiend at an acceptable distance.

Just wait until you realize that "acceptable distance" is actually "giving yourself an extra half second to make sure there's more lead than organic tissue in the guy's abdomen"...

Personally I just stick to good old fashioned automatic rifles. Deals with adds quickly, and with the right mod can shred into heavier foes.

There aren't all that many encounters which are in confined enough spaces to make shotgun range easy to get into without exposing yourself to more fire than I care to take. I don't play the tech classes much so maybe they can do it as well, but I'd broaden that to biotics in general not just vanguards. Vanguards obviously have the charge. But the crowd control capabilities of the botic tree in general make it pretty easy to close in on most encounters IME. In the tech field cloak is pretty good for getting in close but it may be due to my inexperience with that field but its only good vs small groups, combat tree yeah probably not to shotgun friendly.
Shotgun adept since ME1.(admittedly ME1 shotguns had a great range), but I had incredible fun as a shotgun adept in ME2-3 and MEA.
