Let's hear them!
ME1 - Virmire without a doubt. Everything about Virmire swings AND connects. One of the best locations in any video game period. I love the interactions with Saren, having to talk down Wrex, the Sovereign bit, and the choice between Kaidan and Ashley.
ME2 - This one's tougher for me. I like Horizon but I hate how similar the Kaidan/Ashley dialogues are. As a setting and level it's great. I love Thane's recruitment mission, pretty much anything done on Omega, and Garrus's loyalty mission. I know - the Suicide Mission is the big thing here. It's just never done it for me the same way it does for other people. There's no Kaidan/Ashley choice if you know that potentially everyone can survive. My first time playing it left me with my jaw on the floor at how many characters were dying, but knowing that loyalty missions and a guide can secure their survival kind of undoes that for me.
ME3 - Tuchanka and Sur'Kesh are both standouts to me, the entire plot thread following curing the Genophage is fantastic and leaves a ton of choice up to the player. I also really enjoyed Leviathan for what it was!

It is going to be tough to choose just one from each game, but I'll give it a shot.
Mass Effect 1: The final battle on the Citadel where you are walking up the outside of the tower to get to the Council chambers. It is easy to think it is just another hallway until you get up close to the top and you see Sovereign above you, one of his legs pounding on the tower. I still love seeing that.
Runner up: Opening + Eden Prime. A fantastic opening to the game and well-paced tutorial that really sets up the mystery and goal of the game. It pulls me in every time.
Mass Effect 2: I am going to cop out and say the combat mechanics. I have some issues with weapon and power balance, but overall they come together to make the game in the series I love playing the most (on Insanity), with good class balance and variety of fun builds and playstyles.
Runner up: All of the primary missions are great, culminating in the Suicide Mission, but I am going to give some love to one of the optional missions. While most of the side missions and loyalty missions lack the punch the primary missions do, Miranda's loyalty mission is the best of the bunch, split into three distinct segments bookended by some good subplot and character moments. Also, taking Jack on the mission for some extra dialogue is a treat. It is the loyalty mission I look forward to the most.
DLC runner up: While I think Lair of the Shadow Broker is the best ME2 DLC (I can respec squadmates after completing it!), Overlord's atmosphere is just incredible -- and the VI's garbled cries still creeps me out. I think Prometheus Station is the best mission in the entire series: starting as a creepy walk through the crashed ship past all the dormant Geth while listening to audio logs along the way (I hate Flannigan, too), followed by heart-pumping music and a fight against all the awakening Geth.
Mass Effect 3: The multiplayer. Do not misunderstand, I enjoy the single player campaign -- warts and all -- but I fell in love with the multiplayer during the initial demo, and then played it on both Xbox and PC with friends. Some of the combat stuff I dislike about single player work better in the multiplayer.
Runner up: Sur'Kesh and the Geth Base (Priority: Rannoch) and two stand-out missions that I really enjoy, but I am going to say that the final fight to defend the missile battery is just outstanding, especially when you have to fight everything coming at you while the Destroyer is firing its laser (and yes the laser can kill you).
*Edit* Yeah, I know, I didn't keep it just one thing per game. I tried, okay?

Interesting question indeed. In general with some quests depends on ny mood tbh. But in general. ME1Virmire/Ilos mostly. Really like the final battle for the reasons RedCaesar97 has mentiond. That feeling of going through the horde, the surrounding itself while watching that bug over there. Really like it. ME2Here can't really answer the question as ME2 is my favorite game in MET. I just like everything there, including n7 missions. About DLC. What do not like much NOW ONLY - DLC Overlord for one reason: it waa a mystery the very first time, now I know the plot and just lost interest. Though as have mentioned, depends on "green grass and sunshine" - it is still a very good DLC. I know many people do not like DLC Arrrival. But I like it a lot. Really like. "Fight for your life" part is really fun for me: different builds/tactics/and yes, bugs. Actually this part is the most interesting for me. DLC LoftheSB is also great. Though falling on Liara during the fight is unnecessary AT ALL. Annoying, ME3Sur'Kesh and Priority Rannoch think the most interesting fore me. Music is great. Too bad Rannoch is very short only. Really like Priority Earth. Yes, enemies are the same (just the number is different). But the surrounding, the atmosphere - that's what I like. DLC Omega is my favorite. Always play it. Might seem there is nothing special about it, though again, the atmosphere itself is great. DLC Citadel: well, funny, there are many interesting and awesome "good-bye" cutscenes (e.g. Jack as my only male Shep LI tattoo scene is perfect). n 7 mission: though my team is really stupid there I still like these small and fast missions. In general: at some point interest is lost, but it is still a good game with many unforgettable moments. while the Destroyer is firing its laser (and yes the laser can kill you). I use it for Banshees. Rather funny to watch. Just put them on the right spot.

Some fine choices in here. Have a hard time choosing, but will go with obvious things in the first two.
ME1 - When Shepard comes out of the wreckage and gets a smug look on his face, along with the "From the Wreckage" track. Also like after rescuing Tali, when Udina is upset: "You aren't making my life easy Shepard. Firefights in the wards, an all-out assault on Chora's Den...." It's just like in a Blasto movie! Favorite mission is Noveria though, but I like Expose Saren about as well.
ME2 - The escape from the Collector Base. Starting when Harbinger addresses Shepard, and you are running out while the "Suicide Mission" track is playing. Gets me every time. Of course, there are simple joys like "You're working too hard," or "You talk too much." The wrap up to Tali's trial is another one, if the right dialogue is taken.
ME3 - Sur'Kesh mission, starting from the alarms sounding when you are in the lab with Mordin. Also doubles as favorite mission.

Well I would love to see Kelly Chamber to be in a Future Milk way Mass Effect game with any Number of Player Characters and a believable Retcon to make it possible for her to return as Playable NPC for a new Player Character's team. my favorite parts of ME trilogy: 1)Virimire the entire arch for it, DMC might like the idea of me saving Kaiden due to I put him at the Nuke and making sure that Nuke does go off and thus saving Kaiden 2) Entire Collector Base 3) Krogan Home World

Mass Effect 1: Noveria. The whole thing. The amount of player agency on this world is fantastic, the myriad of ways you can get the pass up to Peak 15 and in general corporate shenanigans. I like the idea of this secret research planet on the fringes of Council Law.
Mass Effect 2: Kasumi's Mission. I love the whole thing. From getting dressed up and infiltrating a high-class society party to clearing through Hock's mercs and boss-fighting a Space-Attack Helicopter. Also Hock's gallery of artifacts.
Mass Effect 3: Entering and interacting with the entire Geth Consensus. That was a trip.

ME1: Entry of the Arcturus Fleet into the Battle fo the Citadel. "Destiny Ascension, you are all clear." BAM! That was awesome!
ME2: The whole sequence from meeting Joker again for the first time all the way to the launch of the Normandy SR2. Similar to the ME1 scene, the music makes this one.
ME3: Tough pick here, lot's of very rewarding scenes but one of my favorites is actually one of the smaller moments that just capitalizes perfectly on the relationships built in this game. Shooting bottles with Garrus:

Overall: I'm going to say the decision making and relationships that you build carry throughout the series. I think it's an incredible feat for the video game industry. Calculating all the possible cascading effects for each and every decision. Animating and then recording thousands of lines of dialogue. It's monumental work.
ME1: Size and scope. I remember the first time exploring the Citadel and just being overwhelmed at its size. It was disorienting for a while. ME2: The cinematics and tone. Whether I was on Omega or Illium or Pergatory - each location felt unique. ME3: The combat, the pace of it; and second, the volume and variability of combo explosions lead to a ton of experimentation (which I find fun)

ME1: The intro. Everything starting with the title screen and the music, and all the way through the first planet just blew me away. You could tell right away that it was going to be an experience like no other. ME2: Also the into. Didn't think it was possible to top ME1, but they did. Shep dying was certainly a surprise. ME3: And yet again, the intro. The ME games were amazing at just grabbing you from the first moment, and not letting go.

1: The port section in Noveria. So much freedom to complete your objective however you want rather than being rail-roaded. The other games never reached that level of role playing.
2: It may be a bit hack but the suicide mission. All these years later I don't think I've ever been that invested in a game. Close runner up would be Arrival.
3: Shooting Mordin. Put the pitchforks down and let me explain. That merciless kick straight to the feels had so much weight behind it that it still sticks with me. I don't like shooting one of the best characters in the series but God damn is it a powerful moment.

ME1: The beginning of the game after the intro sequence, when you're first defining and settling in to who your Shepard is and how s/he deals with things like unnecessary and potentially disrespectful chatter on the bridge, overzealous rookies and bureaucratic interference in the form of an outsider inserting themselves in the command structure for opaque reasons. Also the point where you repeatedly troubleshoot Shepard's face in cut-scenes before proceeding to the rest of the game.
ME2: So many things. I truly love this game. Lair of the Shadow broker in its entirety is a highlight, as is Garrus', Thane's, Miranda's and Samara's loyalty missions.
ME3: I love all the dramatic moments. You so rarely get to play with true tragedy in RPGs, and things like shooting Mordin to sabotage the Krogan in order to secure the Salarians' aid with the Crucible, being forced to gun down Wrex when he comes to take his revenge, and ending the Geth over Legion's protests because machines can't be trusted are all very powerful moments and choices framed incredibly well. And I quite like the ending. Sue me.
ME3 is full of great moments and decisions, and I've always been sad that people were such wusses about the original ending that that fact got lost in all the noise.
Absolutely most beautiful moment in the game is the time capsule scene with Liara though.

Absolutely most beautiful moment in the game is the time capsule scene with Liara though Until you romance her and the scene is....exactly the same as any other PT. One of many reasons her romance was a disappointment for me.
Favorite moments - using my first PT experience to pick: ME1: Intro - it got me hooked ME2: Discovering Archangel was really Garrus (thankfully, I was not spoiled) ME3: Grunt surviving the rachni mission (I played this immediately after genophage arc and Citadel coup; if Grunt had been the third death in a row, I would have quit the game)

Until you romance her and the scene is....exactly the same as any other PT. One of many reasons her romance was a disappointment for me. Couldn't disagree more. It's such a beautiful scene that adding overtly romantic elements to it would just cheapen it. Shepard and Liara are already sitting so close, speaking so softly and looking so intimate that you'd be forgiven for mistaking them for a couple already, or at least the dearest of friends. If you're platonic, they're doing that because they know and rely on each other so thoroughly, and share such a passionate devotion to the preservation of sentient life and culture that the moment becomes even more poignant for that reason alone. My jaw dropped when I first played it, and it's been a highlight of every single one of my playthroughs since. Especially the ones where I romanced Liara. Speaking of Liara, her farewell before the final push in London is a treat as well. In my mind, it's absolutely the Asari melding ritual, and she's stealing a copy of Shep's genes to bear as a beautiful little blue baby. Which is a little rapey, sure, and would have resulted in a very serious talk had Shepard lived. But such primo genes shouldn't go to waste, and if Shep goes Control they'll be able to watch their daughter grow up and have children of her own through the Reapers' eyes. Which is incidentally exactly the ending I'm shooting for for the playthrough I just started.
