Okay I just stumbled on something that for all I know may be common knowledge but it intrigued me to the point that I have to try it.
Making mashed potatoes form potato chips. Has anyone ever tried this?

Has anyone ever tried this? That may be the most ludicrous thing I have ever seen. Thanks for sharing. But "oh they taste so good" , yeah because chips are full of good oil, bad oil, fat, salt and other flavour enhancers - I'd be passing just on that count. I am happy to spend an extra 20 to 30 minutes cooking my nice fresh potatoes with some butter, cream/milk or Olive Oil.

Just had thin crust pierogi pizza from a local place that's been around for a while. Haven't been there in years. Pretty standard fare but good quality ingredients. The pizza was great. They sliced the potatoes extremely thin and layered them all over the pizza to get that potato flavour consistent. Then had big chunks of nice meaty bacon, green onions, some sort of garlic sauce, and a sour cream drizzle. All on a thin-crust that didn't get much higher than 1cm, except the crust. All the other pierogi pizzas I've had basically just had little hashbrowns/finely-diced fried potatoes, some skin-on some skin-off. Never had em layered like extremely thin scalloped potatoes, and presumably preseasoned/precooked to some extent as they were baked but underneath other stuff. Cool take on an already sorta weird thing. Looked a lot like this but wood-fire oven baked so lots of yummy slightly charred bubbles on the crust and a smoky coating. All in all a great pizza quite unlike anything I'd order in from the usual suspects.

So made a couple of new things this week, the first was Stracciatella alla Romana (Italian Egg Drop Soup).I first and last had this at an Italian restaurant near where I worked 30 years ago and have no idea why making it popped into my head last week but it did and I did. I made it for lunch and it is really quick, Simmer some Chicken Stock, beat some eggs and some cheese then slowly pour it into the stock while stirring and then add some pepper and salt. Serve and garnish with Parsley. Image from the internet, forgot to take a picture. I make mine less eggy than this photo. Then decided to make Birria Taco's which I have never had but have heard they are delicious. Bit of a pain to make as it requires three hours of cooking time plus 30 minutes resting time in the Broth for the Beef Short Ribs after cooking. Then the actual cooking is a two person job (thanks to my daughter) but they were delicious. So Beef Short Ribs cooked for three hours in broth with some pan fried and poached Garlic and chillies and Cumin added to the broth. Pull the beef after it has rested 30 minutes in the broth, dip a tortilla in the broth, place in a hot cast Iron pan, add some beef and some mexican cheese, fold and cook both sides and repeat. Serve with a dish of Broth for each person to dip the taco into. They were damn good, probably needed to cook the tortilla to be a bit crispy, not the best looking tacos.

I experiment with sauces and food combos such and as a result at times I end up with good stuff and at times disasters.
My recent comb turned out very tasty so I am happy. I had some torillas so I wanted to makes something to put in them.
Put some butter in the pan along with garlic and chili garlic paste and a bit of hot sauce. Added mushrooms and some yellow pepper and cooked for a while. I then added some vegetarian crumble. (This stuff is supposed to kind of simulate ground beef but it is actually made out of cauliflower.) After heating all that up I added a can of cream of mushroom soup and cooked this up until it thickened.
Then i used that to put in the tortillas, turned out really really good, i must have added just the right amount of garlic and hot sauce because the flavor is terrific.
