RPGs or Metroidvania-style platformers preferably, but open to other things. And I only play on PS5 and Switch.

I only play on PC, but I checked to see which games are available on PlayStation/Switch and pruned the rest of my recommendations:
Alright, for Metroidvanias I recommend the Ori games (Ori and the Blind Forest and Ori and the Will of the Wisps) and The Messenger. Only the second half of the latter is a Metroidvania, to be fair. I think you've already played Hollow Knight, but I am mentioning it just in case.
For RPGs, it's been years since I've played any that wasn't isometric, but if the top-down perspective doesn't bother you I recommend Sunless Sea and Disco Elysium. The former has romances (including same-sex ones), but the latter one doesn't (though the protagonist is implied to be bi and the one companion you get is a gay man).
Straying from the genres you mentioned, I play a lot of strategy games, and a couple that I think are really good even for folks who don't usually play strategy games are Mimimi's stealth tactics titles, Shadow Tactics: Blades of the Shogun (the name's terrible, yes) and Desperados 3. You can even think of them more like puzzle games than strategy, and they're party-based in a way that's loosely reminiscent of RPGs.

I really enjoyed Record of Lodoss War - Deedlit in Wonder Labyrinth. A bit on the easy side, though. Don't know if you tried it.

Alien: Isolation Subnautica Subnautica: Below Zero Horizon: Zero Dawn Witcher series (Part 1 has lol gameplay by today's standards, but still cool skill system and great stories) Last Of Us Remaster God of War IV
Apart from Witcher not in the genres you prefer, but everything's still absolute standouts in their respective genres. I'll consider Alien, Subnautica, HZD and TW3 "must play" for every gaming connoiseur.

I'm not normally a roguelike fan, but it really is a game where every death brings you closer to victory. Oh, and there are romance options. The male one is admittedly the embodiment of death but, like, in a sexy way.

Guacamelee One-Two Punch Collection on Switch. It's a pack combining:
- Guacamelee 1 Super Turbo Championship (= Guacamelee Gold Remastered), - Guacamelee 2,
I prefer the first one in particular, it's a faithful metroivania in its mechanics with a few twists: Melee is how you beat enemies, the Mexican Wrestling background (you're playing a Luchador ^^) is fun and refreshing, finally the Soundtrack is so great it stands on its own (both Guacamelee 1 & 2 ost are available to listen on Bandcamp by the way).

Well - Lately I am only playing JRPG's. If you really want an epic journey, you can opt for the Trails series from Nihom Falcom. I don't know about the older titles, but Trails of Cold Steel I, II, III and IV will keep you busy for hours (I know they play on the PS4, but I don't know about the PS5). To stay on the JRPG side - Ever played Persona 5 Royal? I can recommend it. And than there are loose titles like the Atelier series (Atelier Ryza and Ryza 2 are the latest) and some titles that are actually for the PS4, but probably can be played on the PS5, like Dragon Star Varnir, Sword Art Online series and the Tales series (like Tales of Berseria). And of course there is YS IX: Monstrum Nox.
There is more than enough to keep you going for months. However, check for compatibility. As I am a PC gamer I cannot really say if all titles are playable on the PS5.

When it was on Gamepass, I did enjoy Bloodstained: Ritual of the Night. It's true to the old Metroidvania/Castlevania format, has some deep progression systems, and a good mix of secrets you can find that enhance your abilities.

RPG games that you can play on PS5 are my favorites: Divinity Original Sin 2 Definitive Edition - the everlasting best, inimitably good, its world sucks and doesn't let go, every single element of the game is absolutely meticulously crafted and it gives the game its charm
Dragon Age Inquisition GOTY: I'm playing right now, the game has very uplifting moments and a well thought out relatively exciting main story, its characters are sympathetic, its combat system and craft system are brilliant, but due to its open clear nature it often sits down and becomes aimless
Persona 5: I think it was the best game of 2017 and this is the J-RPG that completely reminded me of those memories when I was still playing J-RPG games on PS1, their best J-RPG games of all time. This is one such RPG and if it’s not overly unusual or confusing with Japanese customs and the world of Tokyo then I would definitely recommend it because they created a real masterpiece at Atlus. It has a more expensive, expanded and somewhat lighter later version of the P5 Royal.
And Path of Exile is F2P, always free I love it, I have Diablo 2 on par with me and the other diablo clones have no chance against it, hopefully they will fix the game's performance bugs as soon as possible and it will be perfectly enjoyable on the console as well. This game has an amazingly complex skill system, the more you risk the more you will be rewarded and there is the in-game market that makes things a lot easier for every player.
These are all games that are often discounted in the store or stores and that’s why i haven’t even written brand new titles or not too old games like e.g. MELE.
