I just finished Odyssey and enjoyed it enough to want to play another AC game. Between Origins and Valhalla, which game is most similar to Odyssey? Which game is more interesting in terms of character and story? Which is easier to play?

For me its more about what you personally like and dislike about the games to really know for Ubisoft likes to change many things between releases especially since they have two studios working on the games at the same time.
Similarity in the big picture overall I don't think there is that much of a difference. All three have gear drops, but Odyssey is the only one with RNG loot, but Odyssey and Valhalla have set bonuses where Valhalla allows you to customize your gear with runes that drop along the way. All three have skill like trees, but Valhalla has you finding its active skills with tomes in the game, but when you level up you progress through a stat web for more damage and passive abilities. With Origins you get a skill point every level and some abilities will require you unlocking the path and getting more then one level to unlock. Valhalla has repeatable events with River Raids to be the replacement of the field battles in Odyssey while Origins doesn't, but at the same time they aren't that useful after you get all the gear from it. Only Odyssey has naval combat. If you want to know about length of game I would say Valhalla is more like Odyssey where both games take their time to progress you through the game where Origins is a faster game then those two. All three games have repeatable daily quests for a currency to buy premium items.
Character wise I would say Bayek is more interesting then Eivor, but I would say Kassandra is more interesting then any of the others including Alexios so I think that comes down to my enjoying the voice actor the most. Quality of story I would say all three games are pretty equal, but the way the story is told in Origins is better then Valhalla and at the same time closer to Odyssey's approach.
Personally overall I enjoyed Origins the most out of the three games and I enjoyed Valhalla slightly more then Odyssey. It really boils down to what you are looking for exactly and how the game strikes you. To me the biggest problem with Valhalla is how the story is told and all the other areas for me were superior to Odyssey, but its the first AC game where I really wanted to go out and get a couple of the bad guys and pummel them into a pulp. Where Origins felt like a more balanced games with less "I really like this" and "I really hate this" while feeling the most like the prior Assassin's Creed games to me.

Both have their strengths.
I marginally prefer Origins, mostly for a preference of the Egyptian vs Viking setting.

Thanks - sounds like I will land up playing both. Ill start with which ever one is on sale! Are the repeatable raids in Valhalla required? I didn't enjoy those in Odyssey and landed up skipping a bunch of them. I also landed up skipping most of the mythical beasts - so frustrating and hard for me to kill I gave up on them. Thankfully they weren't required to beat the game!

Thankfully they weren't required to beat the game! The river raids aren't required. There is only some associated gear that isn't mandatory as rewards from them. I think I did each of the River Raid areas twice to get enough resources to get everything it offered and never did it again. Just to be warned they aren't mandatory in the main game either the majority of the time, but if you want to upgrade your settlement you will need to do them.

Valhalla is much closer to Odyssey from an action RPG point of view, but overall Origins is my favorite of the three. If you really enjoyed Odyssey then I think Valhalla would be more appealing to you.

So having played Odyssey and Valhalla overall I prefer Valhalla, but it is close. Eivor is my favorite protagonist. I am trying Origins again but I just can't engage with Bayak so not enjoying it as much as the other games. I like Aya though.
