The differences become most profound in ME3. ME2 is very "shooty" no matter your class.
Do you want biotic detonations everywhere? Or do you want to melt your enemies under a hail of weapons fire and elemental explosions? Both classes are a lot of fun.

It took me literally 7 years to try a Soldier playthrough.
Surprisingly it was a lot of fun, even more so with Adrenaline Rush (ME2 and ME3).
Slowing down time is almost as cathartic as charging with a Vanguard.

This is one of the things Andromeda got right. They removed time dilation and encouraged players to play a more mobile, aggressive style. yeah, could play "Sniper Infitrator" and "Soldier" equivalents in MEA SP without being annoyed the whole time that my main class power made it feel like I was stuck in molasses. Be interesting to compare on a stopwatch and see if Adrenaline Rush actually made you clear areas slower in ME2 and 3 than if you just didn't use it. I suspect it would esp in ME3 when you can access marksman bonus power for a similar damage boost but without the game slowing down.

Soldier is consistently solid all the way through the series. It is a pure weapon-focused class with powers based around improving weapons. You are mostly just shooting the entire time, but you can vary your playstyle a bit depending on your choice of bonus power (and certain power-focused builds) or choice of weapon(s).
Adept focuses on crowd control in ME1 and ME2, and biotic explosions in ME3. Your feelings on the Adept will depend on your feelings with how biotics are handled in each game.

I don't like Engineer much solely because I'm not into drones. Still, skills are abundant and any one doesn't like can be ignored. The class is a monster in terms of having lots of destructive tools.
Every class is well designed and fun in ME2 and ME3. Hell, I even enjoy them all in ME1, though the "half-classes" aren't as unique in that game.
In terms of game design, I can see preferring ME2. In terms of fitting lore to gameplay more logically, and because of speed of play and fun, flashy effects, I prefer ME3. I think Andromeda's gameplay is even better, though unfinished*, as a natural evolution of ME3.
* Andromeda's weapons have no weight to them. The layers of feedback and effects that really polish a game experience were missed in this area. Powers are great, but the guns just don't feel as good as they felt in ME2 and ME3. Crafting customized weapons is a lot of fun but completely broken. More pre-release polish and post-launch support could've fixed these issues.

I vote for Adept and Engineer. As themikefest mentioned, playing (mostly) without having to fire your gun is a ton of fun. It can be extremely challenging at times, especially early in ME2, but it's mega-rewarding.
Adept for ME2 because of warpsplosions. Engineer for ME3 because of drone/turret chaos and the hilarity that ensues.

Yeah my first Shep on the LE wasan Adept I found her a lot of fun to play. I've always found biotics fun to use especially in ME1 and 2 when fighting in tight spaces. Edspecially whe nletting loos ewith a pull field to expose them and then using shockwaves to smash or shake them.

I'm not "into" drones either, but they make a nice distraction for that second scion on the floating platforms on the Collector Ship on insanity In fact, my drone kept the second scion busy for so long that it made a sizeable dent in the Scion's armor. It lasted way longer than stasis. As a result, I got through that phase of Collector Ship in one try the other day.

Yeah drones are useful fo rditraactin enemies particularl yGeth I find using Tali's drone very useful on he rloyalty mission on the Alarei if I'm not an engineer myself

Nah, just kidding.
Soldier. People think it's just guns, but the ammo powers are cool. That, and the sheer versatility with your weapons opens up a lot of possibilities.
As a bonus, ME3 Concussive Shot turns enemies in elemental piñatas. The irony is hilarious when the class that is ostensibly the most weapons-focused becomes the class that uses them the least.

Never played soldier, played all other classes at least twice (male and female). Dice roll decided that my first LE playtrough will be Adept, other option was Sentinel. Might go with "We'll bang, OK" playtrough with quick start male.

Just because it was the first class I chose on ME1, and than, got to love the bullet time.
A big part of my insanity strategy is prioritizing targets and getting them out of the game before they can do any damage, and bullet time is great for that.
In legendary, I will try new classes, but my 1st PT is soldier again, just so I can try to platinum the trilogy in one attempt.

You can't improve guns to level X in a single playthrough. You can, however, sprint through Earth and Mars in a NG+ and upgrade your Shuriken to X very easily. Seems at least in ME2LE one can just shockwave through enemies when being Adept. I cant remember was it this badly balanced originally too? I think hardcore or veteran, which ever is before insanity. I started on normal but it was too easy. Really bad thing spamming it is the screen shake though.. also not much effective on armor of course. But normal enemies, just spam it and be bored

I tmay depend on wha tdifficult yyou pla yon or have it specced as I find it ver yuseful in ME2 especially if you can fire it off before getting swarmed by husks. I find i tver yuseful on missions like the collector ship. I'vve also found it useful for keepin gthe husks off you durin gthe suicide mission too during the biotic shield bit.

I've used Jack on virtually every mission in ME2 on insanity. She does just fine if you have squad incendiary ammo available for her or she has warp ammo for herself. The weapons strip the armor and then she can just throw a shockwave to polish off groups of them in one go.
