No to "trilogy" ... but yes to an ME:A "saga" ... which leaves it open.
Could see different protagonists, ala DA or we could see the Ryder family carry forward as protagonists, similar to the MET ...
But not necessarily held to a three game story arc.
They probably have some ideas on where they want to go, but keeping it open to see how ME:A is received (my opinion).

Walters said it will not be a trilogy so hopefully he is not lying and the ME team is taking some pointers from the DA team. Well, really that kind of ending could happen whether it's in a trilogy or one self-contained game. The real concern I'd have is how it juggles the growing cast as the series continues.

Its not a trilogy but probably a saga or some continuation. Possibly a different standalone titled character in each sequel. Kinda hoping to play an alien at least in the future.
Less imported mess for the writers to work through as in ME3.

I admit. I hope it does carry forward. I know it's a huge pain in the butt, but I got quite attached to my various Shepards and I hope to do the same to various Ryders over several games.
But we'll see!

Because not being a trilogy the devs do not feel compelled to do something pointlessly (and erroneously thought as) high brow with it like forcibly killing off the protagonist with no chance of getting a decent ending because that is how you give emotional payoff to the player (coughBScough). Thank God there are devs who do not strive to try to be "artists" and actually give you a chance to a satisfyingly happy ending in your escapism centered entertainment even in a grim mature game (Hey, ever heard of CDPR and The Witcher 3? Last game for this protagonist -geralt- but hey, I dare you to look at all the different endings and then tell me you do not wish to introduce Bioware's collective kneecaps and their "art" to a professional sledgehammer). Ahem...anyways...yeah it's a good thing that this is not a trilogy.

Mac has talked about future games more and more during the course of the Game Informer interviews/tweets. I get the feeling we are going to see at least 2 entries in the Andromeda/Ryder Saga: ME6 will be back in the Milky Way though, mark my volus words (canon choice and future dev prediction of the day)

Also, yes, you are right in saying that might not necessarily happen to all trilogies made by bioware but I would rather be safe than sorry.

I really hope they do this in a future game. I wouldn't get my hopes up, they've said repeatedly that Mass Effect is a human story. They say a lot of things when it fits or when they wish to avoid a topic. You could easily tell a human story playing an alien, since most of them are quite human in their behaviour anyway.
I wouldn't expect being an alien protagonist any time soon, though. If Mass Effect lives on for a while, as I imagine we all hope, then I can see it maybe happening down the road, but it'd probably be a hard sell to EA.
