I'm surprised they haven't done anything about yet to be honest. It's not what I'd call a secret after all. Maybe they're waiting till the devs get close to actually completing it then swooping in and seizing everything? Wouldn't put it past Disney.
As long as the developers aren't seeking to profit off the endeavor (which they're not - they don't accept any donations and plan to release the mod for free once it's done), then it's technically legal. They're still working with Disney's property without express permission though, so Disney would have the right to send out a cease and desist letter whenever they please, but I think that they don't want to deal with the blowback they would inevitably receive.
If anything, this project would drive a handful more sales of KotOR. It'd be counterproductive to stop it from a business standpoint. Legal's another matter.

All of the chaos behind the scenes of this movie has only intrigued me more. I'm half-tempted to see it just to gauge how badly those troubles affected the final product.

I'm going to give it ONE chance. If this is more of the same, I honestly might swear off Star Wars altogether. It stings to say, but I cannot pretend to love something that is awful & makes me sad. I was already married, after all...
Here is my 1/2700 scale Zvezda Star Destroyer which I got about eight months ago and it's still unbuilt. If you think it looks big it is big, about two feet long when assembled. It's since been released by Revell, same kit just in a Revell box.
The kit is based more on the Avenger studio model from ESB rather than the Devastator studio model from ANH. In Lore terms the Devastator was an Imperial I class SD and the Avenger was an Imperial II class SD. There were quite a few differences between the two studio models. The kit still has accuracy problems but it's leaps and bounds ahead of the old MPC/Ertl Star Destroyer kit.
As I want to do a model of the Accuser which was an Imperial I class SD I have quite a few bits and pieces to get off of Shapeways before I even think about building this monster. I also want to get my hands on Revell’s Republic Venator Class Star Destroyer but that's another story.
