I am going to play a Rogue, and since I want to romance Iron Bull I want to have him always in party, but I also want Cassandra since I feel she is very important for the story and needs to witness every important quest. I've never played in Nightmare before so I have no idea if it is that difficult, but if I get killed easily in Dissent playing on casual I guess is going to be really hard. The problem is that are quest that I want to take a character that isn't a mage, like in Here Lies the Abyss, I'd prefer Varric than any mage, or personal quests that force you on a character like Varric.
Are that important mages in nightmare? more than 2 warriors.

No, a mage is never necessary. You can solo the game as a rogue, so clearly a mage is not needed. There are bridges, blocked caves, and darkspawn holes that can only be repaired/opened/closed by a mage, but all of those are optional. You won't be able to complete the darkspawn quests, but that's about it. Also, see this about magical force-fields: bsn.boards.net/thread/3048/test-magical-force-fields-mageIt will be fine to swap in Varric on those quests. But have mage along for everything else, it's handy to have barrier spammed on everyone.

Mage Dispel is very useful, but not necessary, for rift spawn and enemy barriers. Cass can't do anything with those until she gets Spell Purge in her spec tree after Skyhold. Just don't have Walk Softly turned on and you should be ok.

Hmmm. If you are a peasant like me with just the vanilla campaign, it might be easier to keep the "whole party" alive in a solo then a full melee party. Will be a lot less potion drinking at any rate. Mostly applies to early game before you could potentially craft armor with guard on hit, heal on hit, or whathaveyou. You could always pause and put in a lot of effort with micro of course. Also doesn't apply to a party that is like 2 or 3 archers plus SnS.

Mages aren't necessary at all. I have played large sections of the game on Nightmare + Trials using mageless parties.
Rogues obviously are the best ones in the damage department while Warrios can have decent crowd control. What you might miss the most by not having a Mage is a support Barrier caster, but on the other hand you will be able to sustain decent amounts of Guard for your whole party if you have two Warriors equipped with Horn of Valor/Fortifying Blast. It is not the same as Barrier, but for the most part it works just as fine.

My last run I tried melee only party for a while. The most irritating thing about it was the inability to light veil fire and energize various things.

If you want to experience the entire game, then a mage and a rogue are necessary in your party. If you don't care about missing parts of the game, then no, mages are not needed. If you really want some fun, run a whole party with nothing but mages on nightmare. That is some fun.
