As in, it's not going to overly mess with my gameplay, as my enemies will be at least on a even level with me the whole game? And as such, worth it for a chance for stuff to show up in the special chest?

I haven't found them all that challenging. That said, I am playing on hard and making ample use of the golden nug.

I'm a weeny about changing difficulty settings and using trials in games, but those in particular are easy enough . The nug definitely helps as well.

Even Ground, Take It Slow and Grizzly End are the easiest Trials imo

Even Ground is the way the whole game should work, so that one is on from the start for me. Grizzly End noticeably increases number of bear spawns and bear max health. It's not a gross increase, like you won't be drowning under 100 bears, but I've frequently fought 3 or 4 bears at once in Hafter's Wood. Five was my personal best so far. Most Great Bears I've ever fought at once were two, so it doesn't increase their spawns by as much. Excellent Trial to enable if you need bear skin materials for leather crafting slots. They're so cute, why wouldn't you want more of them? Particularly if they eat bad guys as often as your own companions:
