I was late to the Mass Effect franchise, I didn't play it until I got the entire trilogy a few years ago on my PS3. However I have heard some people say that Mass Effect 2 would have never happened if EA didn't buy out Bioware, I'm not sure how true this is but it would make sense. I know some of the old Bioware fans hated Bioware after they got purchased by EA, they seem to think they went downhill. I should note outside Mass Effect the only other Bioware game I've played was KOTR which I thought had great story but the combat and graphics where pretty meh even for the time. I'm sure I'll get around to playing Dragon Age eventually. Just wanted to get an opinion on EA's purchase of Bioware and how it effected the Mass Effect franchise as a whole.

Funny, I was thinking the same thing not too long ago.
I still think ME2 would have happened without EA, one way or another, as you still have a larger story that is incomplete inside of ME1, it was just building the foundation for it.
As for how it would have turned out, I was also late to the party and don't know the details on why EA bought Bioware, if Bioware was struggling or something or they just liked the deal, or how much influence EA has over the franchise as a whole and the details so it's difficult to speculate. ME2 did seem to take a big change in several ways if that was a result of being bought out.

Although it did sort of become a cookie cutter 3rd person shooter which kind of screams EA influence to me.

I've thought the same as well. AFAIK BioWare didn't start claiming it was a trilogy until the EA acquisition.
Might be why Drew wrote so extensively for ME1 and left halfway through ME2 from having to write a lot for a trilogy that wasn't planned in advance.
Mac said they knew fairly early on during ME2's dev cycle that Drew wanted to leave. Many developers left also on the DA front shortly after the acquisition. I think DA:O lost a couple of the old-school D&D-loving developers because EA imposed so many ideas about going more mainstream and wanting BioWare to make it action-y.
But then Drew actually went to write an MMO right after leaving the ME team so what the fuck am I talking about?

At the same time it was actually revealed to be the first part of a trilogy which allows you to carry saves over. It was quite a large selling point for the game.
