Can't decide between Sniper or Assault Rifle, I never liked a single shot shotgun.

Well, what you're selecting is either Assault Rifle TRAINING or Sniper Rifle TRAINING vs. getting the Claymore Shotgun. That is, you won't get the Revenant AR or the Widow SR. Depending on how you feel about the stock ARs and SRs in the game... it might make your decision easier. Personally, I like adding SR training to the Vanguard (giving him some ability to take out enemies at long range). What the Viper lacks in power against the Widow, it makes up for in speed. I'm also quite comfortable using the Incisor, but I recognize that a lot of players really don't like that SR. I can still use the heavy pistol for mid-range and the SMGs and Shotguns at close range. The AR really only gives more rapid fire at mid-range, but I find the pistol works just fine for me.

It may depend on whether you prefer precision at long distances or an all around versatility. The Mattock is a freaking beast that won't require disorientation when you zoom in through a scope but a sniping rifle like the Viper can cover the Vanguard's weakness at long distances.
Personally, I prefer sniping rifles. Sniping enemies with cryo ammo after knocking them down with shockwave on Garrus' recruitment mission was loads of fun.

I went with assault rifles, largely because I took sniper rifles in my first (Sentinel) playthrough and wanted to do something different second time around. The Mattock is fantastic as opuspace explained, it was the one I used the most. The Vindicator is very good for shooting things in the face after Charging.

I'd go for Sniper Rifle. You have access to SMGs already, so there's no need for Assault Rifles imo. If you have the Locust, you're good to go, even from mid-range. I've heard different opinions on all SMGs though, so maybe you can just try them out and see what works best for you. I love the Locust, but I also know of people who use the Shuriken or the Tempest, which do more damage at point blank (good for a Vanguard after charging).

Viper Vanguard is fun and worth playing at least once.
Don't really think AR training is all that worthwhile on Vanguard unless you have the Mattock.
